Pumpkin Cheesecake Bars

These are fantastic! I agree with other reviewers, there is nothing cheesecake about the taste. It pretty much tastes like pumpkin pie (which I love.) The recipe is super easy!

Homemade Black Bean Veggie Burgers

This would have been a 5 star dish if the texture was more substantial. I've tried some of the suggestions in the reviews but I can't seem to firm it up. The flavor is outstanding & I will continue to use the recipe. My favorite way to eat these burgers: a double-decker stacked with cheese inside of a toasted onion bun.

Greek Pasta with Tomatoes and White Beans

I've cooked this probably 6-7 times in the last few months because it is so tasty (my "meat & potato" grandparents even like this.) This dish is fantastic & you can really customize it depending on what you have available. I like feta cheese however plain crumbled goat cheese really makes this pasta dish pop!

Agedashi-esque Tofu

I've made this recipe twice & look forward to making it again & again. I stayed true to the recipe the first time however, on the second time I used flour insted of cornstarch. The cornstarch makes the tofu a little chewy (in a good way) whereas the flour leaves it a bit lighter. Both ways worked good for me. If you don't have hoisin, sweet & sour sauce is awesome with this as well!

Addictive Sweet Potato Burritos

Wow! I would have never thought of putting sweet potatoes in a recipe like this & I am glad I tried it. I stayed true to the recipe with the exception of the kidney beans: I didn't have enough so I used a mix of kidney & black. The potatoes add an unexpected sweetness to the dish & the leftovers were great, too. This is definitely going into my regular rotation of dinners.
