really great recipe!!!! i made 4 servings. i suggest putting the broccoli into a food processor to chop it super fine. when mixed with cheddar cheese and stuffed into the chicken, it was quite delicious! the spice combination was a little strange with the curry. the curry gave it a nice flavor, but i would suggest halving the curry powder. otherwise a hit! will definitely make this again!!!!

Escarole and Beans

the taste was great- hubby loved it- but i found it to be "mushy"- the beans were cooked much longer than necessary. i also would have preferred a chicken stock base instead of only the juice from the beans. i think the escarole, garlic, oil and salt and peppers should cook first for 10 minutes, then the beans and some chicken stock added second and cooked for another 3 minutes max. good taste but cooking directions need to be tweaked.

Lamb Chops with Balsamic Reduction

awesome, awesome, awesome!!!!! my husband LOVED This!!!!! i let the sauce reduce by more than half....I also added diet butter. I cooked this recipe with boneless lamb steaks- and it was ridiculously good...you dont need to bpay for lamb chops to experience the great flavor of this dish. WELL DONE!

Grilled Atlantic Salmon with Mango Salsa

my local grocery did not carry hot salt, even though I could have sworn i have seen it there...nonetheless, i mixed hot sauce with salt and pressed it into the salmon on both sides. I also put some fresh cracked pepper on too, and also some sea salt. I cooked for 7 minutes each side. IT was the first time EVER that I nailed salmon! And the mango salsa is to DIE for!!!!!! LOVE it! I will definitely make this again. I feel like a chef.

Jalapeno Chicken II

the concept is good but I need to make adjustments for next time. -1- i will skip the bacon- i dont think it added any flavor or value to the recipe. -2- i will use low fat cream cheese -3- i will dip the rolled chicken in egg and breadcrumbs then bake in the oven (and skip the bbq) -4- i will grill the jalapenos themselves first before stuffing in the chicken ---the italian dressing marinade part left the chicken tasteless it needed more marinating..and the jalapeno was too spicy- needed to be cooked before putting inside the chicken. with some tweaking this could be fantastic- the chicken, jalapeno and cream cheese could be a great combination.

Blackened Chicken

VERY GOOD AND EASY WAY OF MAKING BLACKENED CHICKEN.I THINK YOU NEED TO DOUBLE THE AMOUNT OF SPICES FOR 2 BIG PIECES OF CHCKEN BECAUSE IT WAS NOT ENOUGH HOWEVER THE COOKING METHOD AND TIMING WAS GREAT AND I FINALLY NAILED BLACKENED CHICKEN!

Fantastic Black Bean Chili

very very good chili- also SIMPLE! i added a small can of corn to this - and thats it! i also buy corn muffin tops and put that on the bottom of the bowl, pour the chili on top then garnish with some chopped green onions, cheddar cheese and sout cream, and i add a tortilla chip for decoration. a huge crowd pleaser!

Alaska Salmon Bake with Pecan Crunch Coating

with al lthe positive reviews i thought for sure this was a home run. I think there was too much mustard taste- the pecan topping was decent but all in all the flavors did not go together (especially the parsley). Im sorry but I was not a fan of this

Crab Ceviche

great recipe- i made this for super bowl- fiance loved it- at the whole bowl i used Jalepeno peppers instead of Serrano and I used 2 instead of 3 (fiance doesnt like it too spicy) even with the canned crab meat, it was delicious. i will definitely make this again

D's Famous Salsa

i made this last night- my first time making salsa - and it was great!!!!!!!!! i hate store bought salsa - even the ones that are packaged as "fresh". this was the absolute best. 3 pulses in the blender is all it needed. only thing is i want to make it spicier- can someone tell me how to do that without ruining it?? thanks!!

Sweet Sausage Marsala
