Slow Cooker Carolina BBQ
OH MY GOSH!! I just made this & with some changes I rate it 6 stars!! I used a pork loin roast,was what I had on hand,about 2 1/4 pounds.So I reduced the ingredients a bit to accommodate the smaller size.I used 3/4 cup apple cider vinegar.1 tsp salt & a generous dashing of black pepper.Instead of waiting until the end to add the spicy ingredients,I thought,"wouldn't it taste even better if they were cooked in at the beginning?" So I added about 1 Tsp red cayenne pepper sauce,1/2 Tbs red pepper flakes & a good splash or two of Texas Pete Hot pepper sauce(Tabascos in vinegar),We aren't able to eat very spicy hot things so I had to tone it down for us.I let all that cook for 5 hours on high.It tasted good enough to Me just after shredding it!! But I went ahead & added 1 1/2 Tbs of the brown sugar to 3/4 cup reserved liquid.Added a few more red pepper flakes,less than 1/4 cup more vinegar to boost the flavor a bit more,and another splash of the Tabasco. All in the crock pot until my husband gets home,working late tonight.I think he will be amazed we have fresh pulled pork BBQ at home!! We are always going from place to place here in NC trying to decide which place has the best BBQ & now I will not have to go anywhere!!Good ol' Carolina BBQ!!!Right here at home!!I'm SO excited!!

Cheesy Scalloped Potatoes with Ham
My husband & I LOVED this!! I had left over smoked ham from Thanksgiving.I left out the peas.I used Colby-jack cheese,& sharp cheddar.I used about 1/2 cup each.I poured the sauce over the first layers of potatoes & ham.Then also on top .I had added the onions directly into the sauce as it was being heated too.I think it made the onion flavor more evenly dispersed through the casserole.And no fear of them being under cooked.OH! I read some reviews how the potatoes were not fully cooked so I boiled my cut up potatoes about 8 minutes first!Baked at 375 for 30 minutes(as the potatoes were already boiled)This was a delicious dish!

Easy Marinated Pork Tenderloin
I had half of a pork loin & cut into bite size pieces.I made the marinade with Worcestershire sauce,as I had no soy sauce.I used 2 TBS Dijon & 1 TBS honey,as I had no Honey Dijon.Everything else I did as the recipe suggests.I added 1/2 an onion & put into the marinade too.I put in a baking dish with all of the marinade,(after marinading 2 hours),set at 375( I think my oven heats a little cool) for 50 minutes,as I wanted the marinade to sort of dry up & soak in the meat.The meat was still super tender & my husband approved!!Pretty good!
