Chuseok (Korean Thanksgiving)
About this Cook
I'm a Canadian living and working in South Korea. I cook for the local expat community in my current city of residence because many of us miss home cooking. I'm also learning and experimenting with Korean recipes and ingredients. (Facebook: Kitchen Vixen Korea)
My favorite things to cook
I love to bake anything, and when I cook, I like to experiment with unlikely or unexpected food combinations. In Korea, my most requested items are Red Velvet Cake, Cheesecake, and Pumpkin Pie. I also love to host big dinners at Thanksgiving and Christmas. Turkey with all the fixin's ^^
My cooking triumphs
I cooked an 11 kg turkey in a 34 liter convection oven, which seems impossible. I had to cut off the legs in order to fit the bird in the oven, so I fed the legs into the cavity. It didnlt look beautiful, but tasted great, and I was able to feed 13 hungry expats who were away from their families for the holidays.
My cooking tragedies
My oven cooks faster in the back left corner, so I have to babysit my cakes, pies, and cookies, constantly turning the pan so that everything cooks evenly.

Sarah's Applesauce
The first time I made this recipe as written and found the cinnamon to be overwhelming. I omitted the cinnamon completely next time (you can always sprinkle some on top of each serving when serving, to taste), and it was much better this way. I also prefer to puree the sauce. I use my immersion blender so there's less clean-up.

Mom's Apple Pie I
I'm not a whiskey fan, but it definitely adds something special to this pie. I liked that the filling was not overly sweet. This is my new favourite apple pie filling recipe!
