Broccoli with Lemon Butter Sauce

I didn't use cayanne pepper, instead I used lemon pepper. I cooked both carrots and fresh broccoli. It was very zesty and good.

Fruity Cookie Press Cookies

Edible but not good. I made these with black cherry jello mix. I burnt the first batch baking at 400 for 10 minutes. The time that ended up working was 350 for 8 minutes. There was barely any flavor, so in the end I dabbed on some cherry extract after they were baked. I think I am going to have to dip these in chocolate to even make them worth eating.

Hurricane I

This is my new signature drink. I make it differently every time depending what I have on hand. I usually use a orange/mango mixed juice. I have used both lemonade and pineapple juice. I add all the alcohol listed, but instead of grenadine, I use Raspberry Liqueur. It is always a hit and gone fast.

Lemon Stuffed Chicken

I have never roasted a chicken before so I used this as a base recipe. I skinned the chicken and used what I had on hand to season it. I poured bottle lemon juice over it and rubbed it with lemon pepper and paprika. I stuffed the chicken with 8 garlic cloves. I baked for 2 hours, but after an hour I threw in baby carrots and potatoes. It was very moist and got rave reviews.

Fantastic! I used cream of mushroom and cream of chicken because that is what I had on hand. Tossed in 1/2 of tbl of Italian seasoning.

Mom's Island Treasures

I followed the directions as is except I did not have any nuts. These turned out wonderfully. I used a small scoop to drop the cookies onto a baking stone. They kept there shape and were deliciously moist and chewy. I will try to remember to make these for the cookie exchange next holiday, I am sure they would win first place!

Best Tuna Casserole

Have made as is and with modifications and is excellent. This last time I made with rotini noodles, 1 can of cream of cheddar and one can of cream of celery. I added in 1/2 cup shredded fresh spinach too.

Angela's Oriental Chicken Noodle Soup

Quick and easy lunch for us. My 1 year old loves Ramen noodles, and this was healthier than just cooking them with the season package. My 4 year old who doesn't like cooked carrots ate this up too. I cut the carrots very small. A definite keeper!

Creamy Chicken Casserole

This was a great way to use left over chicken! Being on a calorie restricted diet I used low fat plain yogurt instead of sour cream. Using what I had on hand I used white rice and added 2 TBSP of Asian seasoning. I threw in some frozen peas too. Had a salad and broiled asparagus at sides. Loved it!

Pecan Lemon Bars

For me it turned out a bit soupy in the middle and we had to eat it with a spoon so I would bake the crust portion a bit longer, but that is probably user error. All in all these were a wonderful and quick dessert. Even the 2 year old got in on the stirring while the 5 year old pressed and poured!

Martha's Vegetable Beef Soup

So Good! This cleaned my fridge out of leftovers! I added left over pot roast instead of ground beef, chopped carrots, celery, half a mayan onion and garlic. I also added 1 Tbl italian seasoning, speghetti sauce since I didn't have any tomato sauce. The diced tomatos came out of my freezer from this year's crop. I simmered for hour and the last 20 minutes I added frozen peas. Served with fruit salad (had to get some fruit on the table with a 2 year old!), garlic bread and a baked potato for my husband since he is not a big soup eater. Everyone in the family loved it, turned out more like stew than soup - but it tasted great!
