Cheesy Zucchini Dip

Wasn't the best dip, but it was a great use for the garden veggies. I don't like red peppers so I used roasted red peppers, but only a couple. I will probably make again when we have an excess of zucchini but not go out of my way to make.

Lemon Stuffed Chicken

I have never roasted a chicken before so I used this as a base recipe. I skinned the chicken and used what I had on hand to season it. I poured bottle lemon juice over it and rubbed it with lemon pepper and paprika. I stuffed the chicken with 8 garlic cloves. I baked for 2 hours, but after an hour I threw in baby carrots and potatoes. It was very moist and got rave reviews.

Bread Machine Focaccia

I have made this so many times now and love it! I add 1 Tbl Pampered Chef Italian seasoning into the batter. Couldn't be easier! Great as a pizza crust.

Lemon Zucchini Bread

Banana Bars

Blueberry Muffins II

I love these! I substituted 1/2 cup wheat flour and 1/2 cup wheat germ and 1 cup white flour. I topped with brown sugar, but a struesal topping would be fantastic. I did add 1 tsp vanilla too. Made in mini muffin cups baked for 12 min. Very good, will be taking to playgroup tomorrow morning.

Blueberry Streusel Muffins

Made with wheat flour and added 1/4 cup of wheat germ. Turned out good if you like wheat flour, my 2 year old who eats anything wasn't impressed though, but his 2.5 year old friend loved them!

Double Tomato Bruschetta

I make the tomato mixture without the basil the day before. I drain it a bit and add the basil before baking. Very good, took to a ladies tea at church and it was well received.

Strawberry Shortcake

I used this recipe just for hte shortcake. It turned out excellant. Mine did fall apart a bit when cutting it in half,but I have never been good at that any way. I used it in a trifle style strawberry shortcake. Will definitly use again.

Good base recipe. Way too much vinegar for our liking, but was still good. I added both red and green cabbage, 1 minced green onion, 1 tsp celery salt, and 1 tsp dry mustard. Will definitly make again, but with half the vinegar.

Marinated Rosemary Lemon Chicken

I cut the marinade to one serving and used it over 2 chicken breasts. I didn't have real lemon on hand so I just used the juice. I marinated for 24 hours. I broiled the chicken breasts for 10 minutes. I thought it needed some thing else than the lemon flavor, so I basted with a mix of lemon, worchester and garlic for 3 more minutes on each side. It gave it a great carmel color. The flavor ended up being garlicy/worchester on the outside and juicy lemon on the inside. The rosemary was a good compliment to these flavors. I would recommend trying it if you like lemon flavor as I do. It was served with mashed potatos, garlic/cheese biscuits and corn. YUM!

Broiled Herb Butter Chicken

I am usually good about preparing dinner a day or morning in advance. Tonight I was so busy I forgot to think about dinner. This was the perfect last minute meal! I made on big chicken breast (only 2 of us) and broiled for 10 minutes. It came out nice and juicy. I served with rice and left over broccoli.

Quick Italian Meatball Soup

Wonderful simple recipe. I can not speak to the meatballs, I had some leftover stuffing turkey meatballs I had made for an earlier meal. My husband was not looking forward to this dish, but ended up loveing it! I used big bow tie pasta since that is what I had on hand and ended having to double the broth and tomatos. I took left overs to our friends and they really enjoyed it too! Great with a crusty garlic bread. Next time I may add zuchinni or squash to it!
