Mediterranean Lemon Chicken

Used chicken breasts and cooked for 25 mintues. It turned out great! I used pan dripping + chicken bouillon cube and cornstarch for a gravy on mashed potatoes!

Famous Pork Chops

My family (husband and 2 year old) ate this up! I added a couple tsp of garlic pepper rub to the crushed crackers. My 2 year old love crushing the crackers. Will make over and over and over again.

BUSH'S® Nacho Average Nachos

I used this as a base to what I had on hand. I ended up boiling down some frozen salsa I made last year, then added the chicken, stock and beans. I didn't have any spinach but can't wait to try this again with it. I poured it over crushed tortilla chips to still have some crunch. It was a great, quick dinner for my 2 year old son and I. I will definitly make again when Hubby is out of town (he does not eat anything with salsa in it). Do try this!

Orange Baked Acorn Squash

Easy Salmon

Used bottled italian dressing, and omitted the mushrooms becuase my husband doesn't care for them. Next time I will put Mushrooms on half since I love them! Easiest salmon I have ever baked!

Martha's Vegetable Beef Soup

So Good! This cleaned my fridge out of leftovers! I added left over pot roast instead of ground beef, chopped carrots, celery, half a mayan onion and garlic. I also added 1 Tbl italian seasoning, speghetti sauce since I didn't have any tomato sauce. The diced tomatos came out of my freezer from this year's crop. I simmered for hour and the last 20 minutes I added frozen peas. Served with fruit salad (had to get some fruit on the table with a 2 year old!), garlic bread and a baked potato for my husband since he is not a big soup eater. Everyone in the family loved it, turned out more like stew than soup - but it tasted great!

French Toast II

Simple and fast. A perfect week day treat. I used left over day old French bread sliced quite thick. It was delicious! My 2 year old loved it cut into strips for dipping.

Hurricane I

This is my new signature drink. I make it differently every time depending what I have on hand. I usually use a orange/mango mixed juice. I have used both lemonade and pineapple juice. I add all the alcohol listed, but instead of grenadine, I use Raspberry Liqueur. It is always a hit and gone fast.

French Spring Soup

I hate giving 3 stars when I didn't follow the recipe exactly. But the difference was I added mushrooms and left out the asparagus since it wasn't in season. I wasn't thrilled with this recipe at all, needed more seasonings.

Crunchy Cabbage Salad

This is a recipie I remember from my childhood. I added chicken that I had slow cooked in Thousand Island. I left out the peppers since I am not a fan. I got good compliments at a bbq.

Rempel Family Meatloaf

This is an excellent recipe, the best meatloaf I have made thus far! I did add the honey, ketchup and Worcestershire. It was great, but not neccessary as this is a fantastic tasting meatloaf on it's own.

Baked Potato Soup

This soup is very good comfort food. I added Italian seasoning instead of dried basil, since that is what I had on hand. My husband is not a big fan of spicy things so I only added 1/4 tsp hot sauce, and it definitely had a bite. We really enjoyed this meal!

Cheesy Zucchini Dip

Wasn't the best dip, but it was a great use for the garden veggies. I don't like red peppers so I used roasted red peppers, but only a couple. I will probably make again when we have an excess of zucchini but not go out of my way to make.

Lemon Stuffed Chicken

I have never roasted a chicken before so I used this as a base recipe. I skinned the chicken and used what I had on hand to season it. I poured bottle lemon juice over it and rubbed it with lemon pepper and paprika. I stuffed the chicken with 8 garlic cloves. I baked for 2 hours, but after an hour I threw in baby carrots and potatoes. It was very moist and got rave reviews.

Blueberry Muffins II

I love these! I substituted 1/2 cup wheat flour and 1/2 cup wheat germ and 1 cup white flour. I topped with brown sugar, but a struesal topping would be fantastic. I did add 1 tsp vanilla too. Made in mini muffin cups baked for 12 min. Very good, will be taking to playgroup tomorrow morning.
