Ono Butter Mochi

Reviewed: Jan. 4, 2012
Sorry, I didn't make the original recipe so the 5 stars is for the following modification. I used 1 can coconut milk and added 2% milk to equal a total of 3 cups, 2 t. vanilla and omitted the flaked coconut since I have family members that don't like it. It came out great! Very, very dense, as mochi is, and rich so cut into small squares. Has a buttery taste with very subtle coconut flavor. Parts of the mochi may puff up when baking but it evenly flattens when cool. Baked for 50 minutes, turned off oven and left in for another 10 minutes. Made day before and left out unrefrigerated before serving. Was concerned about the 5 eggs but it did not taste "eggie" at all.

Powdered Sugar Cookies I

Reviewed: Mar. 8, 2010
If you're looking for a light and crispy sugar cookie, this is it! I packaged them for Christmas and everyone loves them. I measure the flour generously, the dough is very sticky. I refrigerate the dough for an hour for easier handling and flatten the balls slightly for more even baking.

Apple Oatmeal Crisp

Reviewed: Mar. 8, 2010
Used 3 med. granny smith and 3 med. jonagold and doubled recipe. Baked in 9x13 for 45 minutes. This is very rich and sweet. Its delicious with vanilla ice cream. Next time I would increase the amount of apples because there is a lot of topping. Depending on sweetness of apple, would reduce the white sugar.

4H Banana Bread

Reviewed: Oct. 19, 2005
I've made this bread 2 different ways: (1) all white sugar and (2) 1/2 white, 1/2 brown. They're both good but I think the way with the 1/2 brown sugar is a bit sweeter. I also used every time butter instead of margarine, added 1 t. vanilla, omitted the nuts and used 1 1/3 c. banana. Baked for 70 minutes. Used the recipe for mini muffins and it made 3 dozen. So easy and delicious. Gave it 4 stars due to the modifications.

Lebanese Garlic Sauce

Reviewed: Oct. 2, 2005
I was looking for a recipe that duplicated the garlic sauce from Zankou chicken. This was great! Next time I might substitute 1/2 of the olive oil with canola, the sauce had a strong olive oil taste. Served with grilled chicken, lamb, tabouleh & pita bread.

Instant Vegetable Patties

Reviewed: Aug. 29, 2005
Although the filling is very tasty, I didn’t like the crescent wrapping. The overwhelming buttery taste of the dough didn’t seem to match. I used Pillbury brand which had 6 crescents. The package did say “butter flavor” but that’s all the grocers had. My 6 year old loved them though. Will try it again with possibly puff pastry or other plain refrigerated dough.

Chicken Makhani (Indian Butter Chicken)

Reviewed: Aug. 27, 2005
This is delicious served with basmati rice. Instead of the garlic-ginger paste I used 1 1/2 tsp. grated fresh ginger and 1 1/2 tsp. pressed garlic. Used canola instead of peanut oil. Reduce heat before adding the half and half first, then add the yogurt to prevent curdling. The sauce thickened on its own without having to add the cornstarch. Next time will add 1 1/2 lb. chicken and try boneless breast. Will make again!

Kathy's Delicious Whole Slow Cooker Chicken

Reviewed: Jan. 21, 2005
Everyone in my family ate it (including the kids) without any complaints but it was just ok. Used only 1/2 the oil, anymore would be too much and added a few grinds of black pepper.

Shortbread Cookies II

Reviewed: Dec. 27, 2004
Excellent! I packaged these and gave them out as Christmas gifts with rave reviews. Made the following modifications: Added 1/3 c. ground toasted pecans. Divided dough into fourths and rolled each into 2" logs. Wrapped each in wax paper and refrigerated until hard. Sliced into 1/4" slices and baked until barely a hint of golden brown. Sprinkled with powdered sugar when still warm and then again once cooled. So easy....will be a standard Christmas cookie.

Chocolate Mint Candies Cookies

Reviewed: Dec. 27, 2004
The taste of the cookies is really good, however they aren't very good looking (they are bumpy on top). I was going to give them as part of my cookie tray gifts but decided against it due to their appearance. Used a whole Andes mint on each and swirled with a spoon. One batch made 6 dozen.

Dee's Roast Pork for Tacos

Reviewed: Nov. 4, 2004
REALLY good! I omitted the chilies and added 1/2 the chili powder because I was worried about it being too spicy for my kids. Used a dutch oven instead of wrapping in foil and added 1/2 c. water and a sliced onion. Came out so moist and shredded easily. The kids and adults loved it! So easy and delicious.

Slow Cooker Lemon Garlic Chicken II

Reviewed: Oct. 21, 2004
This chicken has great flavor and a nice tang to it. Served with mashed potatoes. Followed the recipe except for the following modifications: 4 T. lemon juice, 1 Knorr chicken bouillon cube and 1 c. water. Cooked on low in a 6 qt. cooker. It was done by 5 hrs. Probably should have checked at 4 1/2 since chicken was a little dry. Will make again.

Marinade for Steak I

Reviewed: Mar. 8, 2004
I made this as part of a buffet for a party of 45 people and it was EXCELLENT! Many compliments! I doubled the recipe for 12 pounds of tri-tip steak but used 1/2 the amount of oil (olive oil). Substituted shallots for onion, added 2 teas. dry thyme and oregano each, and marinated for 12 hours. Cooked meat on gas grill. It came out juicy, tender and flavorful. Heated the marinade and drizzled over meat, but it wasn't necessary. Would definitely make again.
