Curried Coconut Chicken

I substituted virgin coconut oil for the vegetable oil. DELICIOUS!! Also, I didn't add any sugar. The taste was wonderful without the added carbs/calories. This is going into regular rotation- whole family loved it! Made it with the coconut rice recipe on this site.

Russian Chicken with Feta Cheese

WOW!! It was worth the trip to the liquor store to get vodka!! The only thing I did differently was to double the sauce recipe, and use 2 cups of sour cream and 1 cup of fat free plain yogurt. A bit healthier, and the taste was FABULOUS! Restaurant quality. Froze a batch for next week as well.

Salsa II

I had a bumper crop of tomatoes this year, and made 4 batches of this stuff! Bagged it all up, put it in the freezer, and we're thawing out at least a bag a week. Everyone loves this stuff!! I'm not even a big salsa fan and I can't get enough.

Naan

We have a delicious Himalayan buffet restuarant in town. They cringe when they see my boys coming because they consume about a dozen pieces of naan between the two! My 14 year old declared this was even better- and he ate 5 pieces of it! I grilled it inside on my George Foreman indoor/outdoor grill. YUM. I froze a little dough to see how that works. Would be nice to make larges batches all at once and freeze some for the future.

Indian Tandoori Chicken

I thought this was the best tandoori chicken I've ever had. Hubby and 11 year old thought it was pretty darn good too. 14 year old said "too spicy". Bah, what does he know?! I marinated for about 36 hours. Grilled thin chicken breasts on my George Foreman Indoor/Outdoor Grill. PERFECTION! Made it with the Indian Style Basmati Rice and Naan from this site.

Slow Cooker Stuffing

This is now my one and only stuffing! Not only is it delicious, but not having to put yet another thing in the overfilled Thanksgiving oven is a major plus! I used 1/2 cornbread and 1/2 herb seasoned bread cubes. Also added pecans and apples. Used 2 cups of broth, and it turned out absolutely perfect.

Breakfast Pies

Pretty good. Kids didn't like them much, but the adults loved them. I used Grands biscuits and peeled each one in half. I soft scrambled the eggs. No problems with overflow.

Spicy Rapid Roast Chicken

I need 10 stars! This is sooooo good, that I have actually made up a big batch of the seasoning and stored it in a little container to make this meal even quicker. I've been using 5 lb chickens and increasing the cooking time by about 15 minutes. Perfection. The skin is to die for.

Ronaldo's Beef Carnitas

Hubby and I liked it a lot, kids not so much and they really love Mexican food. I marinated mine overnight, put it in the slow cooker for 8 hours with a 1/2 cup beef broth.
