My-Hop Pancakes

I had some extra buttermilk after making fried chicken so I thouhgt I'd try this recipe. What a waste of time! The pancakes were gummy, tetured more like crepes than pancakes. The whole batch had to be thrown out, not a good thing with 4 hungry kids waiting for breakfast.

Mom's Stovetop Pork Ribs

I give this recipe two stars for ease, even though it did not go well for me. After an hour of simmering, I realized my meat was not getting tender, so I cut it into smaller pieces and put it back into the liquid. It was still too tough after another 40 mins. I had boneless country style ribs that I defrosted in the microwave. Maybe it was the microwaving that made the meat tough. Flavor was OK. Will try again though, as I got very different results than most of the reviews.

Hamburger Goulash

Wonderful comfort food the whole family enjoys! I would have rated this 5, but the recipe needs some clarification. I drained the browned hamburger and added everything into the same pan to simmer. I diced the onion instead of slicing (to hide it from the kids) & substituted 1 can of diced tomatos with the juice for one of the cans of tomato sauce. Everything except the green beans simmered together for 20 mins., enough for the potato to be tender, then added the noodles and green bean to cook til tender. Per others' reviews, I added 3/4 cup water with the noodles. Cooking time ended up to be less than 40 mins. Had I cooked it for the 1 hour recommended, everything would have been mushy. Served it with Parmesean cheese and everyone loved it!

Chicken and Lentils

This is an excellent base recipe. A person could do just about anything with it. I prefer not to add the rosemary. It is still very flavorful and has a comforting stew-like texture. Very nice!

Chicken Tikka Masala

This was a great recipe! I followed others' suggestions and cut way down on the salt. I also made a few substitutions due to being out of some of the ingredients; I substuted sour cream for the yogurt in the marinade. I used green pepper instead of jalepeno to cut down on the heat and chili powder for cumin in the sauce since I was short on cumin. Also, I browned the chicken and made the sauce all in the same pan to save on dishes. Even with these changes, I had great results! Thanks!

Best Chocolate Chip Cookies

GREAT Cookie! Not so great as bars. The cookies were crisp on the outside and soft and chewy on the inside: EXACTly what I was looking for. I did not have brown sugar so I used 2 c. white sugar and 1 Tbsp. molasses and creamed it well with the butter. I made half the recipe into choc. chip cookies with out the nuts. Then added 1/2 the nuts and tried making cookie bars by putting the dough in a 8x8 square pan. I baked it to a beautiful golden color and after cooling tried cutting into the bar. The middle was raw dough. Not being one to waste ANYTHING, I scooped up the bars and spooned them back on to a cookie sheet and baked them for 10 more minutes. They looked like hell but STILL TASTED GREAT. Still crisp and chewy! They weren't rock hard at all as other reviewers said. Also, eggs are what makes a more cakey cookie, NOT flour. Use medium eggs instead of large or extra large to prevent a cakey texture.

Creamy Chicken and Rice

This was great! I was looking for a chicken tetrazini recipe like the one a local restaurant serves and saw this. I subsituted wild rice for white and used cheddar cheese and a little less sour cream. It was just the right texture and richness. I served it with steamed brocoli to my fiance and 3 year old. Both loved it! We have enough left overs for 2 more meals!
