Old Time Mincemeat Pie

I ended up making the candied orange and lemon peelfrom scratch (other stuff full of chemicals). I saved the orange syrup and added 1/2 cup to the mincemeat mixture then reduced the white sugar to 1 scant cup. OMG so deeeelish. This pie has a wonderful full, rich flavor. I can't stop tasting it.

Buttermilk Scones

WOW I just tried these using gluten-free flours and they are AWESOME!!! (sifted 2 c sorghum flour, 1/2 c tapioca starch, 1/2 c potato starch, flat 1/2 tsp xanthan gum) I also added 2 TBSP powdered buttermilk to the flours + 2 TBSP white sugar. I also mixed in 2 TBSP lite agave nectar to the buttermilk. I was really careful to just mix the wet with the dry until moistened before I turned it out onto a floured surface, pressed into a rectangle, then cut into triangles. So flavorful! I'm sure it would be just as yummy with regular flour too :)

Woops - I just wrote the super long review with all the changes!! I forgot to write that I added a few drops of Almond flavoring too! just enhances the flavor a bit.

Irresistible Pecan Pie

For brown sugar lovers, the original recipe is great, but I tried it with white sugar, doubled the recipe,added three extra tbsp melted butter,one egg yolk, and only put pecans on the top. OH MY GOODNESS IT WAS FABULOUS! I'm so excited to have this recipe among my collection! My whole family went crazy. Oh, I also covered top with tinfoil after 30 minutes of baking so the top wouldn't scorch. I, unfortunatelly am forced to use an electric oven that has a heat coil. This coil has murdered many a meal at my house. So, for any of you who have the same kind of evil electric oven, tinfoil can save you too :)
