Guinness® Bread

I didn't have wheat flour, so I used all-purpose. I also substituted light vanilla soy milk and vinegar for the buttermilk. I used Irish steel cut oats and Smart Sense spread instead of butter. I cooked it at 425 F for 15 minutes, then 400 F for 15 minutes, then let it sit in the oven. Despite all these changes, it turned out very well. I think it would have been fine cooking as the recipe states, but I like how it came out--crispy on the outside and tender and chewy on the inside. The flavors were a unique treat for my tongue, and I found myself chewing slowly and really focusing on what I was tasting. I will definitely make this again! Very easy, tasty, and pretty!

Caramelized Turnips

This was so yummy, and I love how it didn't require a lot of ingredients. I used a beef bouillon cube since I didn't have chicken and used sucralose (e.g. Splenda) for the sugar. I made a double batch and threw in 1/4 cup cooked quinoa, which added a nice nuttiness.

The Best Rolled Sugar Cookies

I made these as the recipes states with the exception that I used Splenda instead of real sugar. I was extremely pleased with the ease in which I could handle the dough while rolling and cutting the cookies, although the consistency of the dough really through me off. Also, they were smoking while cooking, but I wonder if that was the fake sugar??? My husband tasted one and said "these are really bleh" (meaning blah, boring, tasteless) but I thought they tasted better than the other recipe my mom always used. I took some to my friends, and they all loved them and asked for more.

Stir Fried Kale

I followed this recipe as other reviewers suggested and used oyster crackers instead of bread crumbs or croutons, garlic scapes instead of garlic, and added bacon pieces. I like this recipe, but have used another one that was similar and called for browning the onions and garlic and then combining with the kale and chicken or beef stock in a saucepan. The stock gave some extra flavor but was also on the salty side.

Fresh Tomato Salsa

I love this stuff! Ever since coming across this recipe, I have been using it for several years, especially with grilled chicken and fish. A couple days ago I made a batch with fresh garlic scapes. Last night I was eating it out of the bowl with a spoon. Tonight it will go with sea bass. Yum!

Curried Chicken Triangles

I made it for the first time this evening for a party. Some of my guests reported they liked it, especially one who loves water chesnuts, but I was not pleased with how it looked. They were a little soggy and not crisp like I expected, even after cooking longer. I thought it was too much effort for the outcome.

Slimmers Pumpkin Soup

I made this recipe as listed and added a few more spices such as rosemary and thyme, as suggested. I used fresh pumpkin. It smelled so delicious!!! I think the wonderful aroma contributed to my level of disappointment when I tasted it. It tasted like utterly bland potato soup. Maybe my taste buds weren't working that day???

Irish Soda Bread I

I made this for an international foods luncheon at work and got rave reviews. I am not a good cook at all, and this was easy and turned out wonderfully my first time! One batch made 16 mini loafs (had to decrease cook time).

Lemon Barbeque Pork Chops

I tried this recipes when I was running low on ingredients. I substituted lime juice for the lemon juice. My spouse really liked them, which says a lot (very picky eater). Very tasty, convenient, and effortless.
