Roast Beef and Gravy

This was so easy and so tasty it was almost embarrassing. It tasted like I had to work much harder than I did. This will be my "go to" recipe for roast beef from now on.

Baked Tilapia in Garlic and Olive Oil

I'm loathe to write a poor review, but we didn't care for this very much. Admittedly, it was my first attempt to cook or eat tilapia, and the fish was frozen, so maybe that's to blame, but this was really garlicy, even for a girl who loves garlic.

This was good, but not something one could eat often - a bit rich. I could see where people were coming from with the bland comments, although it allowed me to really taste the cheese, and I think next time I would try browning the breaded chicken first. I was too lazy.

Pollo Fajitas

We loved this recipe for fajitas. I added a TB of liquid smoke and a TB of lemon juice into the marinade. I think I took other folks advice and also added a bit of cumin. Marinated chicken and beef in the marinade (separately) and liked them both. Perhaps even liked the steak better... Made it two days ago, and this is what we're having again tonight! Yummo!

Curried Honey Mustard Chicken

Roasted Vegetables

Made this recipe for guests Saturday, and they enjoyed it. I didn't use nearly as many vegetables as the recipe called for, and it more than fed my six friends. The flavor was terrific, but I found the veggies created quite a bit of fluid as they roasted, and this led to some mush. I might drain them halfway through next time.

Chickpea and Couscous Delight

I made this recipe for dinner guests this Saturday to rave reviews. In fact, far too much of the dinner conversation revolved around the couscous. They loved the cukes. I will say that I felt like I needed to add a lot more oil and vinegar, salt, pepper and garlic powder to the recipe. I also ended up adding quite a bit of cumin just for some punch. I don't want to say it is bland...maybe subtle. As one other poster said, it's perfect served with something more savory so your tastebuds get a break.

Banana Banana Bread

Super Moist Pumpkin Bread

I made this for the first time last night, and we ate the first loaf in less than a day. Wowsers! My apartment still smells fragrant. I skipped the shredded coconut and the walnuts, and am perfectly happy with the result. Thanks for the recipe!
