Josephine's No-Bake Granola Bars

Easy to make and they taste good too. And the recipe is easily modified. I don't like coconut so I left it out and I didn't have any rice crispy cereal so I used corn flakes instead. I added almonds to th dry ingredients and a little maple syrup to the brown sugar/honey mixture. I liked them so much I made a second batch and added some dark chocolate. When mixing the wet and dry ingredients I started out using a spatula but moved using my hands to finish combining them.

Bean Relish

Very tasty and works well as a side dish or as a snack. I tried to half the recipe using three cans of beans and one cup of mayo and sweet relish. I should have used 3/4 cup for both as it turned out too soupy. But it still tasted great.

Hollandaise Sauce

I have never tried to make a hollandaise sauce before but this was very easy. And it tasted great too. I only used 1/2 cup of melted butter at the end and it turned out very well. I didn't have white pepper so I used black, which may have messed with the color but I don't think it affected the taste.

Salsa Chicken Meatloaf

I slightly modified the recipe, using ground turkey in the place of chicken and bread crumbs in place of the croutons. I didn't add brown sugar to the BBQ sauce either, we get enough sugar in everything we eat. This meatloaf tasted excellent with lots of levels of flavor. It was very moist. Also, there wasn't the "shrinkage" you get when using ground burger. Overall an excellent meal.

Cinnamon Pie

Like several other reviewers I first started looking for a recipe for cinnamon pie after watching the Psych episode with the Cinnamon Festival. This was a very easy recipe to make and tastes excellent. I used a little more cinnamon that called for and, as suggested, use a can of condensed milk instead of the regular milk called for. I also used a ready made pie crust so it was very simple indeed. I highly recommend this pie to everyone that likes cinnamon.

Sausage-Potato Casserole

A tasty and easy recipe. Everyone in the family seemed to enjoy it. I cut the sausage into pieces instead of cutting it in half long ways. The bite size pieces seemed to work well for me. I also used turkey sausage to cut down on the cholesterol. Even with these little modifications it came out very well.

Chicken and Lentils

An excellent dish that was very tasty. The directions were clear and easy to follow. It was my first time using lentils and I could have let them cook a few minutes longer, but even with that it was a very good dish. Nice on a cold and rainy December evening.
