Craig's Cocktail Sauce

This one saved me in a pinch when guests were practically on the doorstep! I quartered the recipe and it worked great. I added a bit more hot pepper sauce than called for, but that is probably individual taste. A keeper!

Key Lime Pie VII

A Key Lime-loving friend whose b-day I made this for said it was the best Key Lime Pie he'd ever had. (Yeah!) Makes a generous amount of fillng for a 9" pie shell, so you could probably use a larger pie plate if desired. I had to bake it for 12 mins; could've just been my oven, but be prepared. Beautiful with whipped cream and a lime garnish!

Quick Sesame Green Beans

My hubby said, "I have no idea what I'm eating, but this is incredible!" ha! Like others, I substituted sesame oil for miso. Added more sesame seeds. A fresh-tasting, beautiful addition to your table!

Pecan Pie V

In an effort to reduce calories and still treat myself to pecans, I used sugar substitutes and cut the butter in half. The pie still turned out wonderfully and no one was the wiser. This is a keeper!

Turkey Mercedes

Hot Fudge Ice Cream Bar Dessert

A big hit with my Book Club! You may use a couple more ice cream bars based on the size of your pan. As other suggested, put chocolate on before the whipped cream.

Friendship Soup Mix in a Jar

Lighter Libby's® Famous Pumpkin Pie

Spinach Pomegranate Salad

Cheddar Baked Chicken

After reading other reviews, I too added onion powder. Also used 2 eggs and that stretched the coating just enough. This got rave reviews from ALL of my family's picky eaters. A keeper!

Honey Mustard Salad Dressing

Almond-Crusted Halibut Crystal Symphony

Successfully substituted tilapia --- ask for the thickest ones they have. Made the time consuming sauce ahead and reheated in a double boiler. Like others, I doubled the sauce. Served for a dinner party of 8 and they're still raving. Not an "everyday dish," but a starred entry for special occasions! Recommended!!

Creamy Cajun Shrimp Pasta

This was amazingly good! I used skim milk --- still worked well. I sprinkled the slightest bit of Parmesan on the top to serve. Like another reader, I added red peppers for color. Next time I'll add some green peppers or broccoli for the same reason, I think. I might also try to reduce the butter in order to further trim calories. It probably won't be as rich-tasting, but then again, I won't feel as guilty so it's a balance!

Carrie's Artichoke and Sun-Dried Tomato Pasta

I'm a "recipe tweaker," but with the exception of swapping out bow tie pasta for fettuccine AND lightly sauteing the tomatoes along with rest of the dish there at the end, I've made this for two dinner parties and kept the recipe intact. It's marvelous --- flavorful, colorful, crowd-pleasing. And because it comes together fairly quickly, you don't have to spend your life in the kitchen and miss out on the party!

Lemon Glazed Cake

If you're looking for tangy lemon flavor, choose this recipe! A tip: If using a bundt pan, poke holes in the crevices (as opposed to the crowns) and pour half the glaze. Then, add another cup of confectioners' sugar and a drop of food coloring and pour the rest. This gives a thicker, more colorful glaze. Since my young daughter requested this for her b-day, I topped with multi-colored sprinkles. You could add something a bit more sophisticated (lemon wedges?)if serving adults. A keeper!

Mango-Pineapple Chutney

I skipped the onions because of family allergies and substituted a can of crushed pineapple for the real deal. Still great! Loved it with chicken breasts. Would be a fab sandwich addition too.

Angel Hair Pasta with Shrimp and Basil

Tasty and easy! My rating is based on a few changes. Used linguine. For tomatoes, used 1 28 oz can, 1 14-oz can and a can of tom paste. Threw a tbl. of Italian seasoning and 1/2 tsp of garlic salt in because mine weren't seasoned toms. As another suggested, put fresh basil in late with shrimp. Enough sauce for 6 easily. My hubby finished his and asked, "Is there MORE?" Enough said!

Lemony Garlic Shrimp with Pasta

I'm another one that skipped the brining (sorry), but still LOVES the recipe. (And it's QUICK!) The only other thing I did differently was to use some freshly squeezed lime on the pasta (because I had no more lemons). It gave it a bit more of a kick. My family loved this and I plan to make it again. (Thought the idea of adding a bit of fresh broccoli was worth trying too! Thanks!)

Caper Baked Chicken

Easy, but sophisticated enough to serve to guests. Cornstarch works wonders at thickening the sauce. I'd double it if I wanted to use it liberally or use it to accent a side dish.

Grandma Johnson's Scones

I'm jumping on the bandwagon with two thumbs up. I've cut this in 12 wedges and frozen them individually (separate with waxed paper) so I can just pop one or two into the oven for a Sunday morning coffee with my DH. Given as teacher "thank you" gifts to rave reviews! Endless variations of additions besides those mentioned --- lime zest is fun, as is a cranberry/mini choc chip combo. Melt in your mouth!
