Warm Tropical Banana Ice Cream Topping

Reviewed: May 22, 2006
Here's what NOT to do: DON'T use ripe bananas (you want them as firm as possible). DON'T cook them too long or stir too much --- just warm them (they get soft). DON'T wait any time whatsoever to serve this (it gets mushy and breaks down). The recipe says to "serve immediately" and that is correct! Good luck!

Broccoli with Garlic Butter and Cashews

Reviewed: May 22, 2006
Like a few other reviewers, I'd either steam the broccoli or cook it in the sauce itself. Err on the side of al dente ... there are few things worse than overcooked broccoli!

Almond-Crusted Halibut Crystal Symphony

Reviewed: May 22, 2006
Successfully substituted tilapia --- ask for the thickest ones they have. Made the time consuming sauce ahead and reheated in a double boiler. Like others, I doubled the sauce. Served for a dinner party of 8 and they're still raving. Not an "everyday dish," but a starred entry for special occasions! Recommended!!

Country Rib Delight

Reviewed: Sep. 16, 2006
Pretty tasty with the addition of a bit of hot sauce --- otherwise I think it would've been too bland for our tastes. Overall, a keeper because of ease of preparation.

Mexican Pork Chops

Reviewed: Mar. 2, 2007
I used chops w/bones because that's what I had on hand. I added a half pkg of taco seasoning as well as a bit of cumin, pepper and onion flakes. I liked the extra kick. One caution: my rice was a little underdone. Next time, I'll give it another 10 minutes to bake.

Broiled Tilapia Parmesan

Reviewed: Mar. 4, 2007
Don't change a thing! It's rare when I make a recipe and don't alter it a bit. I even cut lemons, anticipating that it'd need "something." Not so. An easy, mouthwatering recipe!

Spicy Hot Chicken Legs

Reviewed: Apr. 12, 2007
Just okay. Not visually appealing. I even put it in the oven for the last 30 mins as suggested by others. It was hot... but not really that flavorful. I'll try a different recipe next time.

Angel Hair Pasta with Shrimp and Basil

Reviewed: Apr. 12, 2007
Tasty and easy! My rating is based on a few changes. Used linguine. For tomatoes, used 1 28 oz can, 1 14-oz can and a can of tom paste. Threw a tbl. of Italian seasoning and 1/2 tsp of garlic salt in because mine weren't seasoned toms. As another suggested, put fresh basil in late with shrimp. Enough sauce for 6 easily. My hubby finished his and asked, "Is there MORE?" Enough said!

Banana Banana Bread

Reviewed: Apr. 14, 2007
Honestly, It was good, I've had MUCH better banana bread. I had to bake 10 minutes longer than recommended, so plan accordingly.

Friendship Soup Mix in a Jar

Reviewed: Apr. 14, 2007
A nice, homemade gift when topped with a fabric square, tied with a ribbon and attached recipe. I gave this to friends for Christmas and it was a hit.

Lemon Thyme Rice

Reviewed: Apr. 29, 2007
Terrific recipe with some slight modifications! I increased lemon to 3-4 tbl, reduced thyme to 1 tsp, added 1 tsp onion powder and some fresh garlic. My DH devoured everything left in the pan! I served it with salmon and the lemon was a great accompaniment. Thanks so much!

Beer and Brown Sugar Steak Marinade

Reviewed: May 9, 2007
Tasty! My kids (teens) turned up their noses at the taste of the beer still left after grilling, so if your eaters are picky, take that into consideration. Otherwise, a good choice!

Quick Sesame Green Beans

Reviewed: May 18, 2007
My hubby said, "I have no idea what I'm eating, but this is incredible!" ha! Like others, I substituted sesame oil for miso. Added more sesame seeds. A fresh-tasting, beautiful addition to your table!

Japanese Chicken Wings

Reviewed: Jun. 11, 2007
Tasty! Like the other hundred people that'd reviewed this before I tried it, I modified. No frying, but baking for an hour at 375, then adding sauce for last 15 minutes. Doubled sauce recipe and added garlic, red pepper and ginger; thickened with corn starch. Reduced sugar to 1/2 cup. Served with rice. I think I'll try it with boneless chicken next. Sauce is very sticky, so hard to eat as a wing. But worth it!

Grilled Pork Steaks with Lemon Butter Sauce

Reviewed: Jun. 26, 2007
These were surprisingly good! I was looking for something fast and easy because I had no time to let the steaks marinate. The reviews seemed to run the gamut and like some others, my family generally likes things a little more favorful. BUT... this recipe made up for the lack of spice with being juicy in an unexpected way. I served with rice, veggies and rolls for a quick meal. A basic "keeper."

Quite a lovely dressing --- easy and with a tang. Like some other reviewers, I skipped the sugar, added a bit more mustard. A good "staple!"

Cheddar Baked Chicken

After reading other reviews, I too added onion powder. Also used 2 eggs and that stretched the coating just enough. This got rave reviews from ALL of my family's picky eaters. A keeper!

Stuffed Peppers

I doctored things up a bit to enliven the taste. Meat mix was half burger/half sausage. Replaced half of the tomato sauce with salsa. Yum!

Hot Fudge Ice Cream Bar Dessert

Reviewed: Feb. 9, 2008
A big hit with my Book Club! You may use a couple more ice cream bars based on the size of your pan. As other suggested, put chocolate on before the whipped cream.

Skyline Chili I

Reviewed: Mar. 7, 2008
Love the crock pot aspect! Added half a can of refried beans (for taste of beans without the texture). Substituted chopped canned tomatoes for tomato sauce. Reduced meat to 1 lb of ground beef PLUS 1/2 lb spicy ground sausage --- which gave it a little kick even though overall meat was reduced.
