Mexican Taco Quiche

I used the handy change serving link and adjusted the recpie. I only had 1 pie crust and a lot of reviewers said there was way too mch filling. I cut the recipe in half to 4 servings and my crust was filled to the top. instead of using ground beef, I used 1 can of black beans and 1 can of pinto beans, added a packet of taco seasoning, a few tablespoons of water and heated it until the taco seasoning was mixed in. Turned out pretty good. My 6 year old loved it!

Best Big, Fat, Chewy Chocolate Chip Cookie

Yummy cookie recipe I usually use margarine in my cookies because they turn out thicker/fluffier but decided to follow the recipe exactly. It's hard to give an accurate review if you change a bunch of things. :) Next time I make these I will substitute the butter for margarine use less dough per cookie. By doing so, the cookie will still be thick and fluffy but not overwhelming in size. They are on the sweet side so if you're not wanting to go into a sugar coma, reduce chocolate chips to about 1c - 1 1/2c. But again....yummy recipe just as it is.

Baked Potato Soup V

I've made this twice and both times it was just ok. My kids love it but it's a bit bland for my taste. Yes it is thick....the person who posted even says it's thick in her description. I used skim milk since that's what my family drinks. I think whole would have made it too heavy (well, heavier than it is already) The prep is longer than 15 min. I used 5 very large potatos which equaled about 9 regular and it took 40 minutes for them to cook in the microwave. I cooked 3 for 2o and then 2 for 20. While those cooked I made the bacon, diced green onion and shredded the cheese. From start to finish it took me about and hour and a half. If you can cook your potatos ahead of time, the prep will be much faster. Great for the kids since a lot of kids don't like a ton of spices.

Creamy Rice Pudding

I followed this recipe exactly and found it to be way too sweet. If I make it again I will cut the sugar in half and only use 1/4 teaspoon of vanilla. I prefer thick rice pudding and this recipe didn't produce the thickness I thought it would. If you like thinner and really sweet rice pudding, this recipe may work for you.

Zucchini Brownies

This wasn't a was a cake. I followed the recipe EXACTLY minus adding the frosting. ( I don't like frosted brownies) and it came out way too fluffy and didn't really resemble a brownie at all. The flavor wasn't bad and I couldn't taste the zucchini at all. Definitely not a sweet brownie but still decent flavor. I bake all the time and I have never had a brownie turn out so cakey.
