Slow Cooker Macaroni and Cheese I

I have been making this since last year and my family loves it. I usually make one lb of macaroni and I add ham to make it a complete meal. I have tried it with one egg and two and I find it is good both ways. I usually have evaporated milk on hand so I have not tried it without it yet. I do increase the milk to 2 1/2 to 3 cups to accommodate for the extra macaroni. I use about 3 cups of cheese as well. Great basic recipe to tweak to your own taste. This is on my go to list.

Banana Frittata

Looking for a recipe to use up some eggs and bananas. Tripled the recipe and on the advice of others I added some vanilla and cinnamon. I cooked these in a six inch skillet and they were very easy to flip. My family really enjoyed them and have asked to have these put in our breakfast rotation!

Flatlander Chili

Excellent recipe. Perfect amount of spices. We do not like very spicy food so was perfect for us. I imagine if you want it spicier you could add more. I used 1 lb hamb and 1 lb. ground pork. Didn't have tomato juice, so I used 28 oz dices tomatoes and 1 - 28 oz tomato sauce and 1 -28 oz crushed tomato. I think anything you have on hand will work. Served with French Bread recipe by Jenn Hall from this site. Delicious!!

Pizza Dough II

Great recipe, I have tried several different ones. I thought I had found my keeper and then I came across this one. I love the whole wheat flour. Nice crust, easy to work with. We have pizza every Friday night and this makes 3 nice large pizzas. Thanks Stephen

Authentic Elvis Burgers

My husband had a burger like this while we were on vacation in DE and he loved it. I gave 4 stars because I did not use all the ingredients listed. In place of the pickle, lettuce and tomato we had sauteed mushroom, onion and peppers. I also added some fried banana. Left out the sugar and salt and pepper and substituted american for the cheddar cheese. Actually, we all had a little different version, my daughter only had the bacon, cheese, and peanut butter. I opted to forego the bacon. Overall, everyone enjoyed these and in spite of the high calories, we will make again.

Corned Beef Hash

Very good recipe. I had leftover boiled potatoes from the boiled corned beef and cabbage dinner and also some leftover mashed potatoes. I put all together in the skillet with the onion and I had no beef broth so I used one beef bouillon cube in a cup of water. I used about 1/2 the water, since the potatoes were already cooked. Warmed on the stove in the skillet, everyone thought it was excellent. I might try a bit more of the broth next time to make it a bit more moist but overall excellent. And a great way to use the leftovers.

Chicken with Stuffing

I am giving this 5 stars because I made lots of changes, some I didn't intend to and it still came out very tasty. I accidentally opened a can of cheddar cheese soup instead of cream of mushroom ( which I was going to substitute) and I didn't have any boxed stuffing so I used pepperidge farm stuffing in the bag and I added some onion and bell seasoning to the stuffing. I used 6 4 oz chicken breasts and I put 3 in the bottom with half the soup on top, then the other 3 with the rest of the soup with a little salt and pepper. Put the stuffing on top. I admit the cheese was a bit strong but overall the chicken was moist, the stuffy was tasty not soggy at all. I think next time I might try putting some potatoes in as well. Great easy recipe, definitely a keeper!

Yummy, very nice recipe. Nice and chocolaty, love the peanut butter flavor. Left out the coconut this time, may try adding it next time. Will definitely be adding this to the Christmas cookie list

Omelet in a Bag

This is a great way to cook an omelette. My family has such a good time mixing their own concoction. People are so impressed when I share this recipe. So versatile and flexible I can't wait to have a brunch and serve it to guests.

Oven Roasted Potatoes

These potatoes are fabulous. My whole family really enjoys them. I used Italian seasoning with a bit of extra garlic powder instead of all the smaller amounts of all the different spices. A hit every time I serve them.

Baked Soy Lemon Chops

Very good recipe. I did make a few changes though. Used 1/4 C soy sauce and added 1 tbl of honey. Marinated for about 6 hrs.My family raved about these porkchops. We used boneless pchops and cooked on the grill basting once or twice with the marinade. Will definitely make again.

This is a great receipe. I add canned potatoes to the marinade as well as whatever veggies I have from the garden. Zucchini, summer squash, eggplant. This is a regular on my summer menu!

Split Pea Soup

This was a great basic soup recipe. I did use 2 cans of chicken broth and the other half water as someone suggested. I simmered the peas and the ham bone most of the day, added some 1/2 and 1/2 near the end of the cooking time. I also thought it needed a little something so I put in about 3/4 tsp of crushed red pepper and 2 tsp of salt. Brought it to a potluck and got tons of compliments! Thanks Sandra!

Pork Supreme

I used leftover porkloin roast in this, added some garlic powder and some italian seasonings. Served this over pasta with grated romano cheese. My family really enjoyed this. Easy to make and a good way to use up the leftovers. I plan to try this with chicken also.
