Pumpkin Pancakes

So awesome! I used soy milk instead of regular, and it was fine. Like others suggested, I used the back of a spoon to spread the batter, and it worked really well. Served with a fruit salad, this made WAY too much for my family of three. So, I cooked the extras into pancakes, and froze them. Now, we just pop one or two in the toaster in the morning for breakfast. Really great recipe!

Spinach and Potato Frittata

Really good! I'm a bit lactose intolerant, so I replaced the milk with soy milk, and the cheese with a tablespoon of ranch dressing mixed in with the egg and milk, and it was excellent. I made sure some of the potatoes got nice and brown and crispy before adding in other ingredients, and also added a zucchini in with the spinach. Delish!

Carrot Rice Nut Burger

This stuck together really well, for me. I really blended the rice, as per another reviewers suggestion. However, I found the flavour to be quite cardboard-y. Next time, I'll definately be adding more spices, or something.

Roasted Beets and Sauteed Beet Greens

Hannah's Cream Cheese Caramel Apple Pie

This was really delicious, but I'm not sure where I went wrong.... We've been calling this "pie soup" at my house. As soon as the first slice was out, the rest of the filling leaked out all over the pie plate. It's impossible to eat! What you can get, though, is very yummy. Flavour is just perfect.

Orange Baked Acorn Squash

Delicious, and so easy! Even my picky 3 year old liked it. This was very sweet, but the orange flavour was not overpowering. Am going ot try stuffing the sqash next time with garbanzo beans, carrots, celery, and onion, and we'll see what happens.

Better Slow Cooker Robust Chicken

This was okay. Not great, but not the worst thing I've ever tased. I tried to freeze some for leftovers, though, and that did not work out well! This is not suitable for freezing.

World's Greatest Vegetable Broth

Mom's Brussels Sprouts

Pretty yummy! I didn't add the walnuts, because I hate nuts, but the butter/brown sugar combo was nice. My only complaint was that when I melted the 2 together in the microwave, all the butter settled to the top, and the sugar to the bottom. It didn't combine very well, and the sauce was a bit 'grainy' then.

Eggplant Croquettes

This was very good, but I am a little concerned about the amount of fat injected by frying it in oil. This seems to stick together fairly well, so I will bake it next time. Also, I had a little touble getting the eggplant soft enough to mash, until I covered it while cooking it in the microwave.

Whipped Shortbread Cookies

Where I am from, we always add 1/4 cup cornstarch into the recipe, after whipping in the sugar, but before beating in the flour. I also beat until it starts looking like whipped cream, then set the timer for another 5 mins, and beat for that time before cooking.

This was ok, but pretty bland. I doubled the cheese needed, and used fresh parmesan, and that made the sauce a little easier to use.

Moroccan Tagine

Have made this twice now, once with squash, and once with two peeled and chopped yams. The first time, I accidentally added an extra can of chick peas, and it was so good, I doubled it again the next time! Also added a teaspoon each of cinnamon and cumin. Beautiful recipe both times, big hit at my house.

Squash Stew

Great combo of spices. I found it a little too hot, but that's just my taste. I added ground cumin instead of the toasted seeds, a peeled, seeded and chopped cucumber, and a red pepper as well. Very good, but next time I'll cut the chili by at least half.

Moroccan Salmon Cakes with Garlic Mayonnaise

YUM! I used whole wheat couscous, low-fat mayo, fresh salmon, and an extra 1/2 tsp cumin, and oh, my.... very delicious! I think next time I might cook the couscous in lemon or lime juice, just to see what happens.
