Scallop Scampi

It was okay, but not that impressive. It seems that the cheese, despite the problems of being lumpy, is really important. Without it, the sauce was really liquidy and lacked some flavor. Next time (if there is one) I would reduce the liquid by half.

Grilled Salmon Piccata

This recipe has potential, but it was to sour and thick. I would reduce the lemon juice (to 2T) and double the liquid (3/4 c white wine plus 1 c chicken stock). Would be willing to try it again with modifications.

Chicken Breasts with Herb Basting Sauce

Tasted excellent and was easy enough to make. Only made a few minor changes (omitted onion and pepper sauce). Used boneless/skinless chicken (grocery store was out of bone-in with skin). Still tasted great and came out nice and moist. Served with risotto and it was well recieved.

Easiest Pot Roast Ever

Pretty good, but made some changes and it went over well at a dinner party. Used 1 packet of onion soup powder and 1 can of beef broth instead of the bouillon cubes and water. Rubbed the roast with salt, pepper, thyme. Cut slits into the roast and inserted minced garlic.

Super-Easy Rocky Road Fudge

Very easy to make and tasted great. Had a small problem with the marshmallows melting into the hot fudge mixture in the first batch. Had to let the fudge cool a little before adding marshallows and peanuts.

Eileen's Spicy Gingerbread Men

I was looking for a recipe for Gingerbread cookies and this one works well. I did have some problems with the first batch, but after some minor changes they were great. Used mild molasses (not as bitter as normal), reduced salt to 1/4 tsp, and reduced giner to 1/2 tsp. The dough needs to be chilled until firm (about 2 to 3 hours). Do not over roll the dough (if the dough is to thin the cookies will be very fragile even after baking).

The Best Clam Sauce

This was very easy to make and tasted exactly like what I was looking for. It was very buttery and yummy. Only made one small change: I used 2 cans of minced clams and one can of whole baby clams.

Tasted pretty good, but made some minor changes. Increased the butter to 1/4 cup, used 3 cans of clams, added 1/4 tsp thyme, and added 1/2 cup water and 1/2 cup white wine.

Went over very well. Had lots of good flavor and juice to be soaked up by the bread. The only major changes I made were to reduce the amount of fish (used 3/4 lb instead) because there was already so much good stuff and I omitted the mussels (because I don't like mussels).

Saltimbocca alla Pollo

This was a great recipe. I added thyme and oregano to the spice mixture. Pretty easy to make, but a bit time consuming (preparation). And it took a little longer than specified to cook the chicken through. Served with rice, and it was a big hit.
