Back to School

Well, I'm back teaching. I have a kindergarten class in Bushwick, Brooklyn.  Before the accident I commuted in a car daily, however, I only drive around here, in Cold Spring Harbor and Huntington.  This past week I took the LIRR and subway to work.

Guess what? I'm finding that I'm less fatigued and feeling much better! Who knew that the drive into and out of Bushwick was SO taxing? I didn't realize how tired I was just from driving. It's about 40 miles from here on Long Island to my job, 40 miles of fast moving, texting, phone talking traffic. I do not care to drive it anymore, the roads here are just too crowded with people who are not paying attention to the drive.

I get on the train now and rest, relax and sleep. So far, so good! Hope you are all well and cooking up a storm!

Been creating lots of new recipes, just go to my recipe box if you'd like, here's one of them:

You live in a good area for mass transit. I would rather take the train as opposed to driving if I lived there. I hate heavy traffic, but I love driving. I would hate to not be able to drive. Glad I live where I can drive and not get too frustrated with traffic.

Hi Manella, Thank you, yes taking mass transit is SO much better. I do have to walk through Bushwick a bit, which is NOT a good neighborhood, but it seems to be a time when most people are out. I will look at your recipe box, thanks for the invite! Chrissy

Hi Doc, Thanks for the comment, yes driving can be fun, but around here, it's just plain scary for me now. The roads wind and people forget about how slippery things can get when wet. That's what happened to me, a kid (26 year old) came around a bend and lost control on a wet road. Every time I travel on the roads around here and cars come around a bend towards me I say a prayer. I suppose it will take a while before I feel OK with driving. I will however, always commute to Bushwick, it just makes sense! :-) Have a great day!

I'm happy to hear you are so much better. There is no good way to drive into Bushwick from the island. I did the commute to downtown Brooklyn for about 18 months until my department moved back to Manhattan. Just pay attention to your surroundings and you'll be fine.

Crissy-I am glad you are finally able to go to work. I hope you are on the mend with your injuries. Nice to know you have an alternative to get to work.

Hi; like the other I am happy that you are able to get back to work. The great thing about being able to take transit is that it does give you time to relax and unwind before you get home and the hectic task of making dinner.

Hey Chrissy, glad to hear you are doing better! Taking transit does take some of the stress out of the commute, get a good book to read and remember to watch for your stop!

About Me
Lately I'm I am enjoying the challenge of "Veganizing" and "Nutritionizing" otherwise decadent and fat laden recipes. See my Vegan Gluten Free Brownies for example. It's quite fun to match the taste and add nutritional value to our favorite recipes. Stay tuned as I'm always working on some kind of matching creation.
My favorite things to cook
I like cooking everything, rather than a favorite thing to cook, I would like to share my favorite kitchen equipment, which is, my Blendtec Blender. It is AMAZING. Almost every recipe I create reaps the benefits of this expert kitchen tool. Next to that, I'd say I love my cast iron skillet.
My favorite family cooking traditions
My Mom and Dad used to make the most amazing food. My Uncle Henry used to make these chicken wings that I loved. I remembered the recipe and make a tofu version!
My cooking triumphs
I like raw chocolate and spent about two years creating my own raw chocolate creation, which I call, Pure Delights. It was a fun occupation and hobby. I think, though, now since I'm on all recipes, I've finally come up with an acceptable vegan brownie!
My cooking tragedies
Burning my hand in the oven! Ouch! That hurts! I am prepared now, I bought a little burn kit which has come in handy recently!
