Veganizing and Nutritionizing???

Lately I'm enjoying the challenge of veganizing (that is: making vegan) and nutritionizing (that is: making nutritious) otherwise decadent recipes. The Allrecipes team just posted my Vegan Gluten Free Brownie recipe which I enjoyed creating and now I'm going to create a vegan flourless chocolate cake without the eggs and butter.  I'm waiting for a shipment of Chia seeds from to work on that recipe. I enjoy this challenge and know that we all would love to eat these delicious foods guilt free! In fact using Chia Seeds in this recipe with help us lose weight while enjoying the delicious taste of the chocolate cake, stay tuned! I'll let you know when it's ready! 
Here's some info on Chia Seeds: 
  " Chia's hydrophilic structure holds water, so when mixed with sauces, drinks, yogurt, salad, dressings, cream cheese, jellies and preserves, salsa, hot/cold cereal, dips, puddings, soups, etc. It displaces calories and fat without diluting flavor. In addition to extending foods by 50% - 75% calories and fat have been reduced without compromising flavor, with an ingredient that is 90% water. Chia gel is also a great fat replacer for baked goods and special qualities for sugar control and weight loss."

I love chia seeds and use them everyday but they are not low-cal. I look forward to seeing your vegan recipes.

Hi Marie, From my research on Chia seeds, they actually help weight and compared to eggs they are low-cal. Take a look at this site for more info. Enjoy! Christine

I understand as a vegan your desire to use alternatives to eggs. A large egg is about 72 calories and a Tablespoon of dry chia seeds are about 64 calories. Not that big a difference in calories. As I said, I like and use chia seeds everyday as they have many nutritional benifits plus I like the slightly grassy taste. I have not found them nor do I believe they are helpful for weight loss. I did look at the testimonial link you mentioned. Thank you for sharing. I hope to see more vegan recipes in the future., formerly Nutsonline, is also a good source for organic chia and a bit cheaper. Not sure about the difference in shipping costs.

Thanks Marie, It's really quite a miracle. The bones have fused together and C1 & C2 are now one. I am in physical therapy 3 times a week and headed back to work on May 6th. I have limited movement but I am driving my husbands car now a bit. Thank you for remembering. :-) Enjoy!

I recently broke 9 bones in my back and the dr said they also will fuse back on to my back bones. It feels like someone is stepping on my back.

Oh King, I hope you heal quickly. I know well the pain of broken bones, it's no fun. I hope you can cook at least.

My favorite things to cook
I like cooking everything, rather than a favorite thing to cook, I would like to share my favorite kitchen equipment, which is, my Blendtec Blender. It is AMAZING. Almost every recipe I create reaps the benefits of this expert kitchen tool. Next to that, I'd say I love my cast iron skillet.
My favorite family cooking traditions
My Mom and Dad used to make the most amazing food. My Uncle Henry used to make these chicken wings that I loved. I remembered the recipe and make a tofu version!
My cooking triumphs
I like raw chocolate and spent about two years creating my own raw chocolate creation, which I call, Pure Delights. It was a fun occupation and hobby. I think, though, now since I'm on all recipes, I've finally come up with an acceptable vegan brownie!
My cooking tragedies
Burning my hand in the oven! Ouch! That hurts! I am prepared now, I bought a little burn kit which has come in handy recently!
