Hearty Vegetable Lasagna

Reviewed: Feb. 23, 2013
Would adding eggplants to this be any good, if so do I pre-cook it first?

Mom's Best Macaroni Salad

Reviewed: Aug. 8, 2012
I didn't have sweet condensed milk on hand and made this anyway. Instead of 1/2 cup of sugar, I only used 1/3. It was sweet enough as is. Omitted celery and used lemon cucumbers. It turn out very good. Prehaps for a more creamier consistancy next time I will add the condensed milk.

Kalua Pig in a Slow Cooker

Reviewed: Aug. 8, 2012
You can rock the crockpot with this one! I use 7lb Pork Shoulder. Rubbed Hawaiian Black Lava Sea Salt (found at Sprouts Market) and 1.5 T of Mesquite Liquid Smoke. I added a teaspoon extra of salt because it wasn't salty enough. I also added cabbage when there was one hour left. Also added slice bananas on top of the meat -- but there wasn't any banana smell or taste in the meat, next time will wrapped it in banana leaves. I served this with sweet macaroni salad, mango salsa and sticky rice! I must say that the cabbage is a must because it brings texture to the dish. Absolutely delicious. The leftovers you can freeze or make whatever you want with it the next day!

Maple Salmon

This was very delicious! I didn't have maple syrup -- substitute honey and 1 T. of brown sugar. We put it in our Big Keg grill and it turned out sooo yummy.

This was excellent, I never made collard greens before and I took advice of the other reviewers and added brown sugar and a dash of apple cider vinegar.

Red Skinned Potato Salad

Reviewed: Jan. 24, 2012
I didn't add 2 cups of mayo, I used about 1/2 cup of mayo and some sour cream, lightly coated, the flavor comes through when it isn't heavily sauced.

Boneless Buffalo Wings

Reviewed: Dec. 28, 2011
Fantastic! Recommend you use boneless chicken tenderloins. I soak the meat in buttermilk overnight. Let theses cool on a wire rack to maintain crispness; piling them on top of each other will cause sogginess. I will make big batches and freeze.

I like this, I would omit the cranberries next time, because it was too much going on. The taste was ordinary.

Best Ever Banana Bread

Reviewed: Dec. 3, 2011
I make a lot banana bread; especially in the fall. I didn't have high expectation, I just needed to use my buttermilk before it goes bad. This banana bread is AMAZING. Truly the best banana bread on this site. I can't imagine it getting better than this.

Glazed Chicken Wings

Reviewed: Jun. 4, 2011
This was a very simple and delicious recipe. I seasoned my wings with seasoned salt and spices as well. Afterwards, I marinated the wings in the 'sauce' itself overnight. I then shake off the sauce from the wings and then baked them at 375 degrees for 50 minutes, basting and flippping it every 20 minutes. (Put the sauce on the stove and bring it to a gentle boil for about 4-5 minutes) Then toward the very end, I crisped it up at 400 degrees for another 10 to carmelized it. Made this for first/second graders -- they couldn't get enough. **It is important to reduce the soysauce to about just 1/4 c. or less depending on taste when you already pre-seasoned it with salt**

Broccoli and Tortellini Salad

Reviewed: May 29, 2011
I don't understand all the raves on this dish...it's like any other broccoli salad smothered with sweet mayonaise. I made this for a potluck, but I didn't eat this (I tested it though and wasn't impressed) I thought others will like it...which most did. As for me, I wasn't fond of it. If you are worried about your weight, skip this one...it's too fattening and isn't all that tasty -- UNLESS you like sweet mayonaise on your broccoli and bacon.

Maple Dill Carrots

Reviewed: May 13, 2011
This is great, I added zucchini to this towards the very end when the carrots is thoroughly cooked. Then just toss both veggie with rest of the ingredients. You don't want to add the zucchini at the beginning because it will turn watery.
