This salmon was absolutely delicious! I made it for dinner today, just finished eating so I came back on here to rave about it! After reading several of the reviews, I decided to keep the recipe almost exactly the same. The only tiny change I made was to use panko crumbs instead of breadcrumbs because I wanted more crunch. But that's it! I used whole grain dijon mustard and the frozen salmon fillets that you can buy in a vacuum packed package (I left them in the fridge overnight to defrost, per the package instructions). The fillets fit perfectly into my 9x13 glass baking dish and they were cooked perfectly after 15 minutes. I served the salmon with basmati rice (boiled with a chicken bouillon cube) and marinated spinach with chickpeas and onions. The entire meal was to die for and I couldn't believe how good it tasted! I will definitely be using this recipe again for salmon.. it was so easy and tasty! Check out the photo I posted as well :)
