In my family cooking is a pinnacle point of adulthood. From the instant that you are able to hold a spatula, you are in the kitchen learning how to cook. I am married to the love of my life, and my beautiful wife is always encouraging me to keep myself open to new ideas and new flavor combinations. She is a fantastic woman and an amzing chef as well. She has been the inspiration for many of my culinary creations, and I suspect she will be for many years to come.
My favorite things to cook
My favorite cuisine is predominantly Italian and French. While I enjoy the variety of flavor pallets from all over the world, my heart has always been with French and Italian cuisine.
My favorite family cooking traditions
My family starts everyone off very early learning how to cook. When my siblings and I were young we learned how to bake and make full breakfast meals while the older ones were learning how to saute and temper eggs for a variety of sauces. The older you got, the more kitchen priveledges you were allowed. Until you reached the age where you were allowed to move on to more complex techniques, you remained the intern and plonjour of the family kitchen. Moving up through the ranks over time.
My cooking triumphs
My cooking triumphs would be my sauces; specifically my Saffron Sauce. While I have never had a sauce that was not magnificent, my Saffron sauce is my crown jem. I have cooked for a variety of audiences and never once has anyone had anything other to say than, "This is fantastic, how do you make this?" Everything that I make, I treat it as a piece of art, created with care and timed to perfection. After all, it is the culinary arts that set us apart from the animals. Without the culinary arts life wouold be too much to bear.
My cooking tragedies
I have never had a cooking tragedy. I have found new ways not to make a dish, but I have always been able to correct the flavor of a dish should it go awry. I have a very sensitive pallet, and have never had a dish that tasted anything less than good; and the "good" dishes I recreated and turned them into "great" dishes.
