Allspice Cream Cheese Frosting

Be forwarned: This needs 8 oz. not 3 oz. of cream cheese! With 8 oz, it is a great spin on the classic, otherwise it's fatally flawed and tastes like sugar wax.

Best Carrot Cake Ever

Nice taste and incredibly moist. I added nutmeg and subsituted apple sauce for 1/2 the oil. I also use bread flour and put in pans for carrot loaves great muffins, too. It seems best suited for loaf. So moist you need not frost.

Deep Dark Chocolate Souffle

Easy and impressive *looking*, smells great cooking, and the texture is enticing, too. But where's the taste? My chocoholic husband and I were both let down by the blandness. On separate occaisions, I have tried using a higher cocoa content, better quality cocoa, putting a square of chocolate in the center, adding one T. brewed coffee, adding orange liqueur- and it just never seems to rise above "average" in flavor. It's still in "experiment" mode for me- not a keeper or something I would serve guests.

Best Spinach Dip Ever

This is fast, easy and fantastic. Be sure to drain all excess water from the thawed spinach. I prefer using Knorr's Dill and skipping the watercress. You can also sub light mayo and light sour cream and its still creamy enough. Be sure to make the night before. Serving in a hollowed rye bread-bowl with the inside of the bowl torn into bite size pieces and arranged around the bowl makes a great presentation. You *will* be asked for the recipe, and it *will* vanish.

Caesar Salad Supreme

A great tasting, very creamy alternative to a classic Caesar- esp. when you need to avoid the use of raw eggs (some guests can't or won't eat raw eggs). I went with prepared garlic-parmesan bread crumbs from a local store known for this kind of thing (Eli's Caesar Crunch if you live in NYC or want to buy online) and it was terrific. Suggestion: If you aren't making the crumbs, adjust the amounts for Garlic and Parmesan both to "3", as you might accidentally use double these in the dressing if you are just scanning a printed ingredient list.
