Cheap, easy, yummy! :) I added a can of black beans to the mix for some added nutrients.

Chicken Crunch

Good stuff--Will add this to the rotation. I used wheat Ritz crackers instead of the butter kind and it turned out well. I'm sure it would have been more scrumptious with the buttery kind, but the wheat was still good.

Hearty Lasagna

Reviewed: Dec. 19, 2010
No thrilled with this recipe. I doubled the ground beef as suggested and added Italian spices to the cheese mixture about three hours prior to baking. Seemed bland and blah. If you're really craving lasagna, it might hit the spot, but I wouldn't serve it too proudly.

Chicken Pot Pie I

Reviewed: Oct. 27, 2010
5 stars because it is so easy and pretty tasty. I used 2 chicken breasts, Campbell's cream of chicken soup with herbs, and needed to increase the cooking time by about 7 min. In the future, I will probably be more selective about the veggies I put in it. I grabbed a can of store-brand mixed veggies, but they were too soft. Perhaps next time I will do as other reviewers had and use frozen mixed veggies. One reviewer said that this was enough for two pies, but I feel it was a perfect portion for one pie. Will make again and again!

Yum! The dressing is a little thick, which is fine with me. I know a lot of people would probably prefer it a bit thinner, and if that is the case then I would reduce the amount of cream cheese used. I also added about a cup of walnuts. Great way to get your fruit in!

Italian Chicken Marinade

Reviewed: Aug. 19, 2010
So easy and good. I prefer using Kraft's Zesty Italian for maximum flavor. I like to let it marinade all day in the fridge while I'm at work, and I do put a WHOLE bottle on 4 chicken breasts. It really makes them nice and tender.

Olive Oil Dip for Italian Bread

My husband and I liked this, but both thought it needed more olive oil. It was a bit chunkier than we prefer.

Cordon Bleu Chicken Rolls

Reviewed: Dec. 8, 2009
My husband just told me that dinner was scrumptious. I think it was a first. I was out of some of the ingredients so I used rosemary instead of thyme, plain potato chips instead of corn flakes, and velveeta instead of swiss. Don't pass this one up!

Easy Gravy

Reviewed: Jan. 1, 2009
I cannot believe I made such delicious gravy! I was really worried about it, but it turned out FANTASTIC! I boiled a ham hock for a couple hours, adding more water as some evaporated, then used the water as the base for this recipe. I added rosemary as suggested for pork. It was served with the Rich Mashed Potatoes and my Christmas ham. I wouldn't change a thing!

I don't know anyone who doesn't like this family favorite. I think the crust is best if set out overnight after baked than just 1 hr. YUM!

No-Headache Holiday Sauce

Reviewed: Jan. 1, 2009
Maybe I just don't like holiday sauce, but this was too tart for me. I made it for Christmas dinner and I noticed it was left on many people's plates. I don't think I'll make this again unless I want to top some vanilla ice cream with it. It smelled fantastic but it just didn't taste very good.

Pillsbury Crescent Bacon-Cheese Tartlets

Reviewed: Jan. 1, 2009
These were good. I didn't roll out the dough like it suggested I just pinched it off. I think this made my dough too thick so I will be sure to follow directions there next time. I don't think I had enough filling, so I will probably make just a little extra. My family has requested I make this again!

Apple Muffins

I made the recipe as directed. It was very good and best of all, very affordable. They were wonderful right out of the oven. I think I might add a touch more cinnamon next time and maybe sprinkle some sugar on top as they come out of the oven.

Throw Together Mexican Casserole

Reviewed: Jun. 16, 2008
Affordable and tasty! My fiance' told me, "I actually really liked it." I guess he's been kind with this new cook in the past. :) We didn't have the olives or the taco sauce, so I just used more salsa. I also topped the casserole with 6 pieces of cheese. I only heated it for 23 mins and it was hot all the way through. YUMMM

Chicken Enchiladas I

Reviewed: May 28, 2008
YUM! EASY! I omited one can of tomato sauce and the water. I accidently added the taco sauce to the filling rather than the end, so I used the extra sauce in my pan to cover the enchiladas at the end. My fiance and I downed them and had plenty left for the next lunch (or few)! I served this with a mixture of whole kernel corn and creamed corn, and a side of Mexican Rice II. Since I bought a 10 pack of tortillas instead of an 8 pack, I made the Cinnamon Sugar Tortilla Delight for dessert with the extras. CHEAP and EASY!
