Swiss Chard with Garbanzo Beans and Fresh Tomatoes
I don't agree with those who think this is too bland. It isn't covered in spice, so you really taste all of the ingredients. I thought it was really good and will make again. Only changes I made were adding onions and garlic and a little cayenne in the first step, and at the end I added some cooked pasta to make it a full meal. Really tasty.

Whole Wheat and Nuts Muffins
The flavor of these muffins is really good, but I am personally not crazy about the consistency. If you are looking for a fluffier non-dense muffin, these may be for you. I made only a few adjustments - used brown sugar instead of white because that's what I had - used a 1/2 cup of white flour and 1 1/2 cups of wheat. Also added some cinnamon and shredded carrot, and dried cherries in place of the nuts. I would try this recipe again but maybe add some oatmeal or something to make them more dense.

Blueberry Zucchini Bread
This recipe seems to be very forgiving because I made some alterations and it still came out very well. Used about half the oil (olive) because that is all I had left - used half and half splenda/brown sugar (about 2 cups total) for the sugar, and half and half wheat/white flour. I also used one regular loaf pan and had to cook probably about 20 min longer than listed. Came out really tasty though. Smells AWESOME while baking!
