Bacon Chicken and Dumplings

Corn in chicken and dumplings?? I was skeptical, but tried it anyway...actually very good! I added a little celery and carrot to the veggies, and used half/half and milk instead of all half/half. My husband and I really liked it, even though it is more like a stew than the chicken and dumplings we're used to. The flavor is great, and it's very filling. Thanks, Rebecca, for sharing this recipe - we will certainly try it again!

Roast Beef with Coffee

Certainly not what I expected! I did season the beef with salt and pepper, and decided to add 1/2 cup of beef broth because I was afraid the coffee flavor would be too strong. My husband and I both thought it was great - moist, tender and very flavorful. I'll definitely make this again! Thanks, Karela, for sharing this simple recipe!

Chunky Monkey Pancakes

These are pretty good! I like to have a little more banana flavor, so next time I'll add one more, or maybe slice the banana instead of dice it for larger pieces. All around good recipe!

Chocolate Ice Cream

This ice cream is super easy to make, mostly with items you probably already have. I had to sub 1c of sugar with 1c of brown sugar, and it still had a good flavor. I wish I hadn't added as much milk at the end, because it seemed to dilute the choc flavor a bit, so next time I won't add nearly as much. I'd also exchange some heavy cream for at least half of the milk, just because it needed to be creamier and less "ice milky" once ripened - it was actually a little better soft serve than ripened. I also added some Reese's mini cups for additional texture. Thanks to Kathryn for the recipe!

Blueberry Cheesecake Ice Cream

This is THE best home-made ice cream I've made to date - and I didn't change a thing! I give it 5 stars for creaminess, texture, and simplicity. The ice cream base is fantastic - so smooth and creamy - it will be my new vanilla ice cream base, period! It's also extremely important to allow it to ripen after freezing - preferably overnight - as this will bring out the cheesecake flavor. I still longed for a little more blueberry flavor, because it wasn't very pronounced, so maybe next time I'll add a little cinnamon to the blueberry sauce. Thank you, Melissa, for sharing this fantastic recipe!

Amish Friendship Bread Starter

I love making this bread, and I'm out of starter, so I'm delighted to see the makings of it. One variation we love is instead of adding raisins - I add 1 cup canned pumpkin (not the pie filling), a few dashes of allspice and cinnamon, and toss chocolate chips with a little flour and fold them in - and it's delicious - a real keeper!

Plum Blueberry Upside Down Cake

I really enjoyed this cake - a great summer recipe. I only had 3 plums, and that was plenty for my 9" cake pan. Very sweet and tasty, especially with a little vanilla ice cream!!

Easy Peach Cobbler

I enjoyed this recipe, and it's soooo easy! I happen to use too much syrup from the canned peaches I used, so it was a little runny, but the taste was excellent. I took some suggestions and mixed the butter and cream cheese with the cake mix, and it turned out really good. The flavors were evenly distributed throughout the cobbler. Excellent find....will definitely make again trying different fruits!

Bob's Awesome Lasagna

This was pretty good for my first time making lasagna at home. I did, however, take the advice of other members and tweek it a little bit. I added 1/2 lb. of italian sausage with the beef mixture, used Vodka sauce with the Prego sauce, added a little hot sauce and fresh garlic. Also, I used Barilla no-boil noodles which worked wonderfully. I also mixed ricotta and cottage cheese to equal 16 oz, and next time will double that (I like lots of cheese). My boyfriend loved it, and I can't wait to try it again. (Made great leftovers, too.) Thanks, Bob!

Poblano Chicken Enchilada Casserole

Overall, this recipe was good. I did take some suggestions and added some chili powder to the cooking chicken, and I also added chili powder and rooster sauce to the cilantro sauce. It added just enough to keep it from being completely bland. However, my tortillas on the bottom seemed to stay very dry, but it could've been the brand I used. I liked it pretty well, and my sweetheart said it would've been better without the tortillas. I may make it again, maybe using flour tortillas instead.

Tres Leches Cake

The cake is pretty good. It tastes like a mix of angel food cake and yellow cake. I didn't have whipping cream, so I used whipped topping instead for the frosting, and it was good. The cake didn't really start soaking up the liquid really well until a few pieces had been cut, and it was in the fridge a couple of days. It was really good with cherry pie filling. Next time, I will try to add some additional flavoring to the milks.

Quick and Easy Alfredo Sauce

I was a bit skeptical, because when I added the cream cheese to the butter, it just became clumpy and not smooth at all. I went ahead and started adding the milk and whisking it - it turned out perfect. The flavor wasn't very strong, so I may add more cheese next time. The consistency was perfect, although I may take some other suggestions and add parsley and chives next time. Thanks for a great homemade alfredo sauce!

Biscotti

I was amazed how easy this is. I love biscotti, and was anxious to try making it at home. I found my dough to be very sticky, so I had to add another 1/2 cup flour to the mix. I didn't have anise, so I used vanilla instead. It was still great. Also, I used a dark pan for baking, so the edges looked burnt, but they still tasted great! Thanks!!

Spicy Potato Wedges

This was pretty good and very easy. The potatoes were a little mushy, but I popped them under the broiler for just a few minutes, and that did the trick. I went a little heavy on the spices, so next time I'll reduce them a little, but I'll definitely experiment with this recipe. Thanks!

Mushroom Stuffed Chicken Rollups

I couldn't believe that I made this! It is so easy, and the mushroom stuffing would be perfect for lots of other meats. I processed the mushrooms first, used garlic, and omitted the nutmeg (cause I had none), and used thin-sliced cutlets, and it was perfect! I also replaced the heavy cream with cream of chicken w/mushroom soup, and it made the perfect gravy for potatoes. Thanks so much for this excellent recipe!

Cheese Cake Cups

Wow! This is so good! I took the advise of some other comments and added a little sour cream to the cream cheese, then stirred in a whole bag (way too much) chocolate chips. I also used ginger snaps instead of wafers, and it was great. I used the paper muffin liners, and they were hard to peel off. Next time I'll try using the metallic type. The cooking time was at least 30-35 minutes - not the 15 the recipe calls for. Thanks for such a great, easy treat!!
