Aloo Gobi Masala (Cauliflower and Potato Curry)

One of my favorite Indian dishes. I omitted the tomato (for our picky 6 year old). Added turmeric, coriander, garam masala, and a pinch of paprika. I served it with a small dollop of plain yogurt on top.

Delicious Stuffed Potato Pancakes

I found it was better to dry the shredded potatoes before combing in egg mixture. Also, make the cakes small and relatively thin so the potatoes can cook through. The kids ate them with ketchup and said them to be delicious.

Hummus III

I doubled, and roasted, the garlic. Used soaked dry beans rather than canned. I also used 1/3 cup lemon juice (rather than 1/4 cup). I also threw in a 1/4 cup of sun-dried tomatoes and topped it with chopped cilantro, rather than parsley (as it's what was in the fridge).

Bacon Sweet Potato Cornbread

I noticed before cooking this recipe, that it didn't call for any flour (which I usually use in corn breads). However, I followed the recipe exactly; except for cooking it an extra 7 minutes because the middle was still a bit mushy. I'm sure this is my error, but it didn't ever rise properly and the outside was over-cooked (but not burnt) while the inside took longer. I was careful not to over mix and I most definitely didn't leave anything out nor adapt or substitute anything. How do you get it to rise? And how do I keep it from cooking unevenly? I used a 12" cast iron. Maybe a smaller one?

Classic Waffles

I mixed the dry ingredients together ahead of time (& added cinnamon) so I could wake up early and just add the other ingredients. Other than that, I've followed the recipe exactly. They turned out flat (not fluffy AT ALL) and bland. If they weren't still hot, it would've been like eating a brick. I think oil is best used in waffles instead of butter, but thought I'd give this recipe a try seeing as it has so many positive reviews. If anyone has enjoyed this recipe I'm certain it has been through their own minor tweaking.

Instant Chocolate Oatmeal Cookies

They were a bit too gooey. Fall apart in your hand, a bit messy. I wasn't crazy about the flavor either. They're a bit too sweet for me. But then again, it is a cookie.
