Fish Tacos

These where terrific! I followed the recipe for the most part. However, I only added 1/2 teaspoon cayenne powder and used walleye fish. Easy to make. Family loved them. I did serve mine with the sauce, but also put fresh salsa and guacamole on our tacos. Yummmmm.

Baked Pork Spring Rolls

I have been making these rolls for several years now. I love them and so does everyone else that I have ever made them for. I do make some changes though. I add more oyster sauce. I also add softened Saifun noodles, chopped up. I do deep fry mine. When I am ready to serve them I make a sauce made with 1/2c lemon juice, 1/3c soy sauce, 1t chili sauce, one chopped green onion and 1t chopped cilantro. Dip you spring roll in that and OH MY GOSH are they good!!! This is no doubt one of my most favorite recipes from Allrecipes.com.

I'm afraid this one was lost on me. I made it for a chili contest at work. I made it like the recipe said, but added less BBQ Sauce, and to be honest, was ashamed to serve it. It was so sweet and over powered by the BBQ sauce that it didn't even taste like chili.I tried to doctor it up, but the BBQ just overpowered everything. The really bad part, this recipe makes a boat load of chili. I guess if you like BBQ a lot, you will like this recipe.

Grandma Johnson's Scones

I love this recipe. It is so easy to make and so versatile. I change the flavors to my scones all the time, but my two favorite flavors are Orange, cranberry, white chocolate scones and almond, cherry scones.On each recipe I leave out the currents. For the first flavor I add 1/2 to 3/4 teas. orange flavoring, 1 cup dried cranberries and 1 cup white chocolate chips. For the second flavor I add 1/2 to 3/4 teas almond extract, 1 cup dried cherries and 1 cup white chocolate chips. On both flavors I drizzle melted white chocolate over the tops of the scones after they have baked and cooled. I also devide the recipe into four equal size balls and shape each ball into a flattened circle and cut each circle into 8 section so that I get 32 little scones. It is a great size and works well for when you want to take it to a potluck. They never last long and I get asked for this recipe all the time.

Zucchini Coconut Loaf

I have been looking for a good zucchini bread recipe and I have finally found it. This is a great recipe. The coconut blends nicely with the other flavors, without overwelming it. Most zucchini bread recipes that I have tried are very bland, but this one has a wonderful flavor. I did change a few things, however. Instead of currents I used dried cherries and pecans instead of walnuts and it was great. My family absolutely loved it.
