Kale Puttanesca

When I saw anchovies on the ingredient list I knew this would be a daring recipe but it turned out awesome! I used double the kale and diced tomatoes and added artichoke hearts which I highly recommend. I will probably add double the amount of capers, at least 50% more anchovies and slightly less angel hair next time since I don't think there was enough of this wonderful sauce. All in all I'm definitely going to make this again!

Mad Hatter Salad

Yum! I substituted oriental flavored ramen, used broccoli slaw and added one yellow, orange and red bell pepper to replace the broccoli. I also added salad shrimp and mandarin oranges, I believe the oranges are a must. My only two qualms were that the seed/nut/noodle blend doesn't toast evenly at all and my sunflower seeds were burnt before my almonds were toasted. Also, this dressing is great but WAY too sweet... Think I'll add extra vinegar and citrus next time.

Italian Spaghetti Squash

This was very good. I definitely used extra garlic including some on the squash which I added butter to as well. I added some leftover shredded rotisserie chicken to the sauce to make it a complete meal and it made a large portion.

Sausage Smothered in Red Cabbage

I have made this twice and it's delicious and serves many. I prefer to use twice the sausage, twice the apple and 50% more vinegar (half apple and half red wine), everyone loves it.

Ground Beef Casserole

It was very easy to make, and pretty inexpensive which I appreciate. I did find that the cooking time was a lot less then in the directions, which was even better. I used a little more of the diced tomatoes then the recipe called for and put about two tablespoons of butter over the hot noodles before putting in the oven which I think made it more moist. I also added extra brown sugar and soy sauce to the meat which I've found compliments worcestershire sauce. Yum.

Bacon Risotto

It was very good, I added twice the cheese (though I used an asiago/parmesan blend), red bell pepper, roma tomato, peas, fresh parsley and spinach. I would recommend these additions.

Best Chocolate Chip Cookies

Perfect chocolate chip cookie recipe. Just what you want when you think of chocolate chip cookies. I melt the butter just to make it easier to mix, and I add just a tad extra vanilla and salt. And I cheap out and use imitation vanilla, and skip on the nuts. Great to make with the kids (so easy). I will never use frozen dough again. People who gave this a bad review probably just don't know how to bake. Shame. :)

Ground Beef 'Wellington' with Fennel

It was just okay. I don't know if I don't like fennel or what because the rest of my family is saying it's great, but they may just be kissing up. Ha. :) It is something different to do with ground beef however. It's just really dry.

Crispy Eggplant with Spicy Tomato Sauce

Delicious and totally easy. I used a sweet basil pasta sauce and added garlic, oregano, chopped onion and a dash of thyme. I served it with spaghetti. I LOVED it, and will definitely make it again. I also added a little extra shredded parmesan cheese on top of the breaded eggplant right before putting it in the oven. So good.

Chicken Divan

The mayo flavor was really strong, and I didn't even use the full amount, I substituted about half of what was called for with sour cream. That was the only thing I modified, but I put bread crumbs on top. All in all, if I tried this recipe again I would use all sour cream, no mayo, and I would use a cheese soup, like Campbells cheddar cheese soup, instead of the cream of chicken.

Amber's Sesame Chicken

I just made this and I swear to betsy this is about the best chinese food I've had in a long time, and I can't believe I made it! I didn't use the five spice, instead I used ground ginger, cheaper and so yummy. I probably used about two teaspoons of ginger in the flour mixture. And when it came to the vegetables, I used two whole green bell peppers and three fourths of an onion, and I cooked the vegetables in a tablespoon of minced garlic and a teaspoon of ginger. I also added a can of baby corn in the step where you add the vegetables to the meat and sauce since canned baby corn is already tender. I also made about five times the sauce and served it with sticky sushi rice. SO SO SO GOOD!

The sauce was very good and created a glaze over the salmon, it would of gotten five stars if I was a bigger fan of salmon and if the sauce was a bit stronger. But good overall.

Sweet and Sour Beef and Cabbage

I served this dish with rice. It was pretty good. I put a good bit of soy sauce, extra garlic powder, a tablespoon or more of extra oats,and a pinch of red pepper flakes in it and I found it very flavorful and satisfying. It makes a good bit, and every member of my family enjoyed it. Thanks for the recipe. Good use of very inexpensive cabbage.

Creamy Banana Bread

So moist and delicious! You really cannot go wrong with cream cheese. My family loved it and everyone agreed it's better then my mom's decade old recipe. Love to beat ma in the kitchen! The cream cheese as well as the crunchy, flavorful center makes it one step above. I will turn to this recipe anytime my bananas get too ripe. Thanks for sharing!
