Hot Artichoke and Spinach Dip II

I made this for a work potluck and it absolutely stole the show. It was gone within 10 minutes, and at least a dozen of my coworkers personally complimented me or asked for the recipe. However, I agree with other reviewers that the original recipe makes for a very thick, heavy dip, so my only modification was to add some chicken stock (about 1/2 cup) to thin it out a bit. Still, this dish is really flavorful and delicious. I will definitely make it again!

Kale Chips

I seriously LOVE kale chips and usually just toss them with some olive oil and salt before baking, but the vinegar added a really nice kick! Reminded me of salt & vinegar potato chips. Yum!

Basa Fillets in Tomatillo Sauce

I skipped the rice and used tilapia instead of basa, but otherwise followed the recipe exactly. Overall, it is a really tasty and interesting dish. The tomatillo sauce was crisp and tangy and tasted great with the fish, but I thought it was a little too watery and will try to thicken it up next time so it adheres to the fish better.
