Spinach Manicotti with Italian Sausage
cottage cheese? No, just no. RICOTTA PLEASE!!!!! This needs some serious spice as well, Maybe some basil, oregano, heck, even thyme would work!!! A tablespoon of something at least!!! Garlic, garlic and more garlic (at least one clove, we do 1-2 tablespoons of minced.) I also saute onions and mushrooms with half the garlic and add that to the mixture... Also, on top, you HAVE to add Romano or provolone, or both to the motzi :)

Spinach Cheese Manicotti
I don't pre-cook my noodles... I add half the water, and only in the jar that is going on the base of the pan. (If i am not making homemade sauce.) I also saute onions & diced mushrooms with garlic for the stuffing. I sometimes add Italian sausage as well, depending on my mood. The flavor wasn't here though, you need a LOT more spices unless the sausage is added.But even with that, I nearly use two tablespoons of minced garlic, 1 tablespoon of oregano,basil, or thyme; and of course pepper and a little bit of salt. It's a GREAT BASE recipe for sure!!!!

Barbecue Bacon Cheeseburger Meatloaf
I have always made my standard meatloaf with barbecue sauce vs. ketchup... no complains there... my issue with this one is the cheese choice and the lack of onions... First, onions HELP flavor the meat! Sure there are spices/sauces in there, but there is something about an onion. Also, I much preferred provolone stuffed meatloaf, the processed cheese pleases the little ones, but the adults A: prefer the provolone, and B: it is much more pleasing to the eye.
