Ham Casserole

This is a great way to use up ham and potatoes and it is wonderfully filling. I agree that if you have a big appetite this will feed about 4-6 adults and stirring the sauce into the potatoes helps get it distributed because it is pretty thick. Next time I will saute all my veggies and only boil the potatoes and some broccoli. The sauce was very cheesy (yum) but next time I will add a little nutmeg and some sour cream and use some parmesan too for a little more depth.

Potato Omelet

Very forgiving recipe. I had leftover broccoli and asparagus so it all went in. Did not have cheddar or swiss so added about 3 oz cream cheese instead. The dill was a nice addition. And I cooked it like a frittata (cooked eggs and veggies together with a lidded pan). Yum!

Saucy Macaroni Skillet

My husband and kids loved this! I thought it was ok. I used ground turkey, left out the butter and almonds, and I only had 1 cup of cheese. This would work with any veggies you had. Really quite versatile. The grown-ups added a lot of pepper at the end to spice it up a little. Pepper flakes would work well too.

Beefy Potato Volcano

Love the baking technique...works great! I didn't have any gravy so I attempted my own by making a roux and then adding chicken stock and herbs. Canned cream of chicken soup would probably be good, too, instead of gravy. Also didn't have tomatos but did have bell pepper and spinach. This recipe really lends itself to using whatever veggies you like.

Nicole's Chicken Pasta

I had some leftover Braised Balsamic Chicken from this site and I thought this might be a good way to use them up. The chicken had soaked the balsamic so I had to add a little more and I also added a little olive oil at the end. It's okay but it's probably not something I'll make again though.

Best Spanish Rice

best and easiest! I have made spanish rice from scratch before and this tastes just as good and there's no chopping. I usually only use 1 cup of rice so we don't end up with too many leftovers. I use 2 cups of stock and 3/4 cup pace salsa.

These are pretty gross. The only reason I gave 2 stars is because my 4 and 1 year-olds will eat them. I'm baking the last batch now only because I want to use the m&m's in the batter. What a waste of yummy candy.

This was really good. I don't like mushy greens so I only cooked about 55 minutes. I also used ham because that's what I had on hand. Definitely make again.

Slow Cooker Chicken and Dumplings

This is okay. I'm the only one that liked it though. It tastes nothing like homemade, but it's tolerable. If you like canned cream of chicken soup then you will like it. That's all I tasted. I even added herbs and celery for extra flavor.

Marinated Grilled Shrimp

These were yummy! Used frozen shrimp and also used 1 jalapeno for the heat. Marinated them for 5 hours. They were not spicy at all, just good flavor. I sauteed the shrimp and boiled the marinade for a few minutes, then served with the marinade poured on top. Got many compliments from my book club.

Linguine with Chicken and Sauteed Vegetables

This was very tasty. I doubled the veges, as suggested, and I added another tsp of oil. It was too oily! Next time I'll keep the oil the same. And after I chopped the cilantro I thought it would be too much, but I ended up using all of it. Flavors blended well. Next time I'll mix the onions in raw instead of blanched with the other veges.

Slow Cooker Chicken Taco Soup

A little salty for me, but canned stuff does that. I will make this again but not for a while. DH does not like shredded chicken so I cooked mine on high to keep chicken together and then did a rough chop at the end. Definitely use the sour cream and cheese. It really cuts the heat and adds some creaminess. Chopped cilantro is good too.

Kathy's Delicious Italian Pasta Salad

This was yummy! And it's nice that you don't have to let it sit for hours to let the flavors blend before eating. I shredded a carrot, added artichokes and used berenstein's balsamic dressing. A sprinkle of pepper flakes added a nice kick.

Kung Pao Chicken

This fits the bill when you want Chinese but don't want to pick it up. It's fast and easy but it's not quite the same. I tripled the sauce (essential), added carrots and broccoli and served it over white rice. I like spicy food and it wasn't too hot for me or my husband.

Turkey Shepherd's Pie

The only items I had left over were diced chicken, mashed potatos and corn. This looked so good I made some gravy with chicken stock and zucchini/ cauliflower puree (I love the sneaky chef purees). I did saute the veges (corn, finely chopped broccoli, peas, onion, garlic) about 8 min and then added the chicken just to get it warm. Put the veges and chicken in the dish, poured the gravy over it and put the potatos on top. Added only salt and pepper to taste. Yummy.

Slow Cooker Chicken Stroganoff

I recently rediscovered this recipe and have made it 3 times in the last 2 weeks. This is the one time I actually prefer to cook the chicken on high because it doesn't fall apart. I used almost the entire envelope of seasoning and was not disappointed. I only added pepper at the table. I added frozen broccoli and chopped carrot the last 45 minutes and it comes out perfectly. Resist the urge to add liquid at the beginning if you like your chicken to stay together. Served over whole wheat rotini.
