Laura's Easy Oatmeal Squares

Liked this, added bit chopped walnuts and substituted 1/4 cup bran with 1/4 cup oats, added bit of prune purée that I had on hand, made in muffin tin, sprayed with oil. Came out easy, kids actually said less chocolate would be better. Will do again but less per....made 9 in the muffin tray, better if they were bit smaller for kid size treat.

Donut Muffins

This is nice, easy, but kids thought too much nutmeg. Used donut baker instead of even, came out perfectly. Skipped Butter on outside, just used sugar and cinnamon to coat.

Slow Cooker Chicken and Dumplings

Very nice for little effort. Used four bone in skinless breasts and they turned out very moist and tender, one roll of biscuits was plenty. used one cup fresh chicken stock and one cup water to ensure meat was covered. served with rice/ quinoa. Will do this again.... So easy, even better next day.

Honey Baked Chicken II

Everybody enjoyed this. Used bone in chicken breasts with skin, only 1/4 cup butter, doubled curry, added 1/2 teaspoon garlic powder. No time for marinating and still flavor came through. Covered with foil for 1st 45 minutes, then removed for last cooking time. Even good cold in chicken wraps day after. Easy preparation for cooking in a hurry. It's a keeper.

Creamy Potato Leek Soup II

Very easy and lots of flavor for such simplicity. I used only a quarter pack of bacon because that's all I had plus watching fat content. It still had great bacon flavor, added 3 cloves chopped garlic to leeks at last minutes of sauté. Substituted half can of evaporated 2% milk and regular milk Instead of cream. Partially mashed everything with hand potatoe masher. Turned out chunky, thick and delicious. Everyone, including picky kids enjoyed it. Will be a 'keeper' for easy light dinners.
