Chicken Pot Pie IX

Fabulous! I added a baked potato for fun. The only recommendation I would make is to at least do 1-1/2 the sauce. Great recipe thanks!

Mom's Zucchini Bread

Very happy with this, nice and moist. I used 3 cups of zucchini instead of the 2 it says. I squeezed about 1/2 of the shredded zucchini to get some of the water out, but still left some in for the moisture. I used 1/2 c. oil and 1/2 c. apple sauce, and split the flour in half and used half white and half sprouted wheat. I also used 1-1/2 c. white sugar and 3/4 c. brown sugar instead of all white. I also added raisons which I think really added some flavor. I think I might try adding shredded carrots next time. Cooking time took about an hour and my oven cooks on the hotter side. Will definitely make it again.

Creamy Broccoli Soup

I think this is great! This is the first time I've made a cream of broccoli soup. I used this one because it seemed simple, amd I like that! I made a couple alterations: added half a carrot, half a celery stick and I puréed them with the broc and onion before I added the milk part. Then I steamed about a cup more broc cut up in tiny pieces and added that when I added the cheese. I also doubled the cheese. Very good! I also took a little of the onion out before I puréed, it smelled a bit oniony to me.

Boilermaker Tailgate Chili

Love it! Perfect for a winter day in New England. I have experimented with other recipes and although this has a lot of ingredients it was definitely a winner today. I did make a couple adjustments. I used 1 lb. hot sausage and added 1/2 lb. sweet sausage (because I needed to use it up in the fridge). I only used 3 cans of chili beans total, (I like more meat then beans). I added a jalapeno pepper just for fun. I browned the meat and added all the stuff in the pot on the stove (use an extra large one). I let it all cook on the stove while I was chopping and just added as I got things done. Then when I had it all together and every ingredient in the pot, I transferred it to a crock pot and cooked on low for 8 hours overnight. Then turned the crock pot off for 3 hours to let it thicken up. Then about half an hour before out guests came we turned the crock pot on warm. It was the perfect consistency and tasted great! I'll definitely make it again. And probably add a few different hot peppers to experiment.

Butternut Squash Soup II

I've made this a few times now. LOVE IT!! I typically don't make the same thing the same way twice though. I've made it exactly as it and it was good, I also made it a couple times with variations: used 1 medium white potato, 3 med. red potatoes, 1 sweet potato, everything else the same, but the last time I made it I added brown sugar and a touch of nutmeg. I think that was a great addition. My sister-in-law wouldn't let me take the leftovers home that night when making it at her house. And if you have a hand immersion blender I would use that, so much less to clean up! This is a fabulous and healthy and hearty soup. We pair it with an awesome fresh crusty bread and spinach salad .

Pepper Jelly

Love it! I used twice the amount of peppers called for and I think I could have added more if I wanted to. Also think next time I'll add a jalapeno pepper for a kick (it's very sweet). I also did half red and half green peppers for the look. Also a few minutes in to the cooking process it didn't seem like the peppers were small enough (i had only chopped small them with my knife) so I put my hand blender in to the pot for a quick couple bursts and it chopped them up in nice tiny pieces that were perfect for spreading. I got lots of compliments on it when I took it to my parents house for Thanksgiving.

Sweet Potato Soup

Love it! I used carrots instead of turnip and added a celery stock, also swapped out one of the white potatoes for red potatoes. The nutmeg really made this. I only used 1 tsp because that's all I had left and it was great. Just the perfect hint of nutmeg in the taste. Will be making this again! And I didn't transfer it in to the processor to puree, I just put my hand blender in to the pot on the stove and that did the job perfectly. No need to dirty something else in the kitchen.

Oatmeal Raisin Cookies IV

I actually swapped out the raisins and pecans and just added chocolate chips, and added a bit more oats. I brought these to a cookie swap 2 weeks ago, and people are still telling me how good my cookies were. Highly recommend! YUMMMM!

I've made this multiple times already and it's a family favorite. I'm getting ready to try it with added meats and veggies. I bet it will be even better. But my family always requests I make this when we do special brunches. It's easy and yummy!
