Big Soft Ginger Cookies
Wow, doubled the recipe. Didn't have margarine so I hesistantly used butter flavored Crisco. Used full flavor molasses and didn't have dry ground ginger so I grated amount (used about 3/4 of the amount called for since I had doubled recipe and that was all I had). Also, since another viewer had suggested orange juice I added half the amount of water and the used orange juice concentrate for the other half. Used a large melon baller to scoop them out and drop directly in a bowl of sugar. Not messy at all once I rolled it. Really flattened them out so they looked like what I had thought they should coming out of the oven. They are perfect. Absolutely beautiful, fragrant, chewy, and not a lot of mess. This one is going in the recipe box!

Lemon Cupcakes
I usually do not try recipes that have not been reviewed but I was out of time and this was the first 'from scratch' non chocolate cupcake recipe I came across. It was worth it. They were fluffy, not dry, and delicious. Slightly 'crisp' on the outside and moist on the inside. Tasted like they were from a bakery and not from a box. I did make a few substitutions but I don't think it effected it. I did not have self rising flour and used regular white flour but added 1 tsp baking powder for every cup of flour plus added an additional half tsp of salt. I also did not have lemons but used lemon juice (store bought) and halved the amount for the zest. This review is for the cupcake as I had left over frosting and so used that.

Watercress Pesto
I have always wanted a different way to make watercress besides potato soup or throwing it in salad. I tried this with pasta and chicken. Very good. Thanks Mandy!
