Gingerbread I

Tasty but not as ginger-y as I'd wanted, even after adding extra ginger. Warm & comforting...and does my house ever smell good!

Rhubarb Custard Pie IV

I made this with a graham cracker crust instead of pastry. I was looking for a good, custard-y rhubarb pie, but ended up with more of a rhubarb tart. It would be delicious as a bar, but there really wasn't enough custard to fill up the pie pan. I think I'll use a recipe that calls for more eggs & more milk next time.

Pumpkin Chocolate Chip Muffins

I loved this recipe. I lowered the temperature to 375, and used cinnamon baking chips instead of the chocolate. I also used 1 tsp. of Pumpkin Pie mixed spice instead of the individual spices. I took 2 dozen of these to a Girl Guide camp and the girls prefered these over the store-bought muffins! I will make another batch tomorrow...they're perfect for rainy autumn weather.

Happy Birthday Cake

I made this for my mum's birthday, and had many compliments about it! It was beautiful spread with fresh whipped cream and topped with sliced strawberries and pansies. Next time I'd make two layers, and sandwich them together with raspberry jam or cooled custard.

Coconut Cream Pie

A fantastic coconut cream pie. I made my crust with 1 1/2 cups graham cracker crumbs, 1/3 cup white sugar and 6 tbsp melted butter, mixed and pressed into a pie plate and baked @375 for 7 min. Keep stirring the mixture while it's on the stove or dark-brown blobs will end up in the pie and you'll have a very messy pot to clean.

Braised Tofu

Fantastic recipe. My mistake was using too small of a pan...maybe it's time to invest in a wok. This was wonderful at a Chinese-themed party served with jasmine rice.

Chocolate Filled Muffins

The batter turned out a little dry but not bad. Forming 'balls' out of the coconut mixture was impossible...the mix was too mushy to form into balls or push into the muffins. Next time I would fill the cups only 1/2 full, place a lump of the coconut mush on top and then top with more batter. Not bad, but messy to make!
