Beef Peach Pie
Admittedly a bizarre concept, but it works wonderfully. So glad I tried it, the entire family loved it including my 21/2 year old granddaughter who dislikes meatloaf. Made a few modifications: Doubled the ground beef (but kept recipe quantities of filler ingredients and seasonings.) used fresh peaches, skinned and thinly sliced. Doubled the glaze ingredients and used apple cider vinegar. Added about 1/4 tsp dry mustard to the glaze. Don't be put off by this unusual pairing of meat and fruit. The recipe is quite simple and very tasty.

Slow Cooker Pot Roast
Very, very, very good - and incredibly simple! Perfectly thickened gravy. Meat and carrots that are "just right" tender; not so soft as to fall apart, but fork-tender. In regard to complaints about saltiness- might be differences in the brand of any of the mix packages. We used Publix mushroom gravy mix (in lieu of beef gravy mix), Hidden Valley Ranch dressing and Good Seasons Italian Salad dressing mix - 1 package of each. Just perfect! Might cut down on the pepper just a bit next time, but this is most definitely a "keeper" recipe.

Simple Whole Wheat Bread
Great recipe! Have made it 3 times. Very delicious, soft and light compared to most wheat breads. Even messed it up once, by forgetting to allow it to rise in the pan, and it still produced a tasty (though much denser) bread. Love the fact that it makes 3 loaves, plenty to share with family and neighbors, or freeze for later. Delicious and simple. Can't go wrong, so long as your ingredients (such as yeast) are fresh. Have another batch in process right now.... Yum!
