Restaurant Style Chicken Nachos

My husband and I really enjoyed this. I sauteed the onion and garlic with taco seasoning per others' suggestions, but I did have to add quite a bit of water because it was very thick. I also added some rotisserie chicken to the seasoning towards the end for a nice coating. Toasting the chips beforehand gave it a really nice crunch. We will definitely be having this again!

Peppermint Marshmallows

This was my first time making marshmallows and this was a great first recipe! I only used 1 t. peppermint and it's still a little strong for our tastes so I am dusting them in cocoa powder to help add a different dimension. It was also nice that the mess was minimized with these directions. I'm looking forward to experimenting with other flavors.

Cheesy Hash Brown Bake

We made this for a swim team breakfast (6 pounds of hash browns) and many of the boys finished two helpings and asked for more. This will definitely be on our menu in the future!

No Bake Peanut Butter Pie

Wow! This was amazing! I also would say the 16 ozs of whipped topping is too much or to add more peanut butter. At 12 ounces my pie started to look almost white. Tasted great!

Grilled Glazed Salmon

I followed the recipe almost exactly. I wish I would have had extra marinade to brush over the fish since I always throw out the marinade that is used with the raw meat. Otherwise, my husband and I found this to be a great recipe. It has a different and flavorful taste--I would also probably experiment with adding lemon or butter in the future. Thanks!

Zucchini Bread IV

This recipe looks exactly like my grandmas, so I had high expectations. I used applesauce instead of oil to cut down on fat and calories, and the bread ended up almost rubbery. I will try again and maybe have half oil, half applesauce.

Mexican Bean Salad

I have never really liked beans but am trying to expand my horizons. This dish was good the first day but FABULOUS as time went on. This is definitely a keeper! Thank you!
