Lemon-Cream Cheese Cupcakes

I made these one of my husband's co-worker's birthdays and was specifically asked to make them again for the next birthday. I made them for a bridal shower and everyone raved about how delicious they were. These cupcakes are AWESOME. I did make a few very minor changes. 1) I used a lemon cake mix instead of white. (still added the lemon pudding) 2) I doubled the amount of lemon juice in the frosting to 4 Tbsp. and added a touch of yellow food coloring. 3) I filled the cupcakes with lemon curd. You can make your own, or if pressed for time, I buy Dickinson's (most any grocery store should carry this, Wal-mart does). 4) I baked for only 18 minutes. Super moist, perfect amount of lemon flavor, and absolutely divine. This recipe is a definite keeper!!

Balsamic Cream Sauce

Delicious! I had to use beef bouillon granules and cheddar cheese because it was all I had, and the sauce still turned out yummy. I can't wait to try try this again with the chicken bouillon and some of my other favorite cheeses.

Cinnamon Rock Candy

My first batch came out perfect and the candy hit 300 degrees in exactly 25 minutes; my 2nd batch, I used a shallower pot and it took forever to hit 300 degrees. If you follow the directions and use a thermometer, I think you'll find this recipe easy to follow and very delicious. I'm trying raspberry in my 2nd batch and I think this candy would be yummy no matter what flavor oil you use. But definitely use OIL and not extract. There won't be nearly enough flavor if you use extract. Also, make sure you stir the oil in very thoroughly, I didn't on the first batch and parts of it were unbearably hot and other parts didn't have enough flavor. OOPS!

Microwave Lemon Curd

Unbelievable how EASY this is to make. I was a little nervous about trying a microwave recipe, but this recipe is definitely a keeper. It tasted divine, just like lemon curd is supposed to taste! My husband loved it too.

Scrumptious Salisbury Steak in Mushroom Gravy

Delicious! I did make a change though, not because I saw anything wrong with the recipe but because I am lazy! Instead of making a sauce with the butter, flour, milk, and mushrooms...I just used a can of cream of mushroom soup and milk. I added some flour to make it thicker. Still turned out yummy! And it had a good gravy consistency.

Chicken and Red Wine Sauce

My husband and I both love this recipe. The first time I made it, my chicken did not turn colors; the 2nd time I made it, they did have a purple tinge to them. Not sure why? I added mushrooms to the wine and brown sugar while it simmered. This is a definite repeat in our house!

Portobello Penne Pasta Casserole

This was really good, especially the next day. I made it on Saturday night, we had some for supper and brought the other half to church potluck. I had several people ask me for the recipe. I did cut down on the soy sauce, used more pasta, and drained my thawed spinach. It was delicious!

Wild Rice and Beef Casserole

This had a really good flavor, but came out a bit dry. Next time, I'll add a can of cream of mushroom soup or mushroom gravy to it and I think it would be perfect.

Poppy Seed Chicken II

This is one of my favorite chicken recipes, because it is so easy and delicious. I like to add cooked pasta to it before baking it, it makes the casserole go alot further...especially if you have a crowd to feed.

Cake Mix Cookies V

I LOVE this recipe! I don't think I'll ever make cookies from scratch again; plus there are so many variations that can be done with this. A few that I have tried are: Coconut cake mix, with 1/2 cup shredded coconut, 1/2 cup macadamia nuts, and 1/2 cup chocolate chips; Lemon cake mix with 1 cup white chocolate chips; Strawberry cake mix with 1/2 cup shredded coconut and 3/4 cup white chocolate chips; Carrot cake mix with 2/3 cup oats and 1/2 cup raisins. YUMMY! I have so many more flavors to experiment with! I did find that I had to bake them a bit longer than the recipe called for, about 11-12 minutes. Try this one, you won't regret it!

Sausage Egg Muffins

Delicious! And they smelled SO GOOD coming out of the oven. I did add 1/2 cup of shredded cheese and used Egg Beaters instead of regular eggs. I also added cajun seasoning for some extra flavoring. I'm going to try it with bacon next time!

Low-Fat Blueberry Bran Muffins

For a healthy muffin, these are delicious. I was suprised how moist these turned out, all the previous "healthy" muffins I've tried are dry and bland. I did make a few changes: 3/4 cup Fiber One (chopped fine), 3/4 cup wheat germ (instead of 1 1/2 cups wheat bran) I used vegetable oil instead of applesauce; I used Splenda brown sugar instead of regular brown sugar and added 1 packet of regular spenda. I also used 1 1/2 cups blueberries instead of just 1 cup...the more the merrier!! Minor changes and the muffins were still a huge hit with my husband.

Egg and Sausage Casserole

I made this for our monthly family breakfast get together and everybody loved it. There were no leftovers! I did have to make a few changes...I doubled the amount of eggs and seasoned it to our personal preference (left out the oregano and added some Tony Chachere's, a Louisiana seasoning) I also added sauteed mushrooms, onions, and bell pepper. I think it would be delicious even without the changes though, and a very easy recipe to make!

Martha's Vegetable Beef Soup

This is the easiest and most delicious beef vegetable soup I have ever made. My husband loved it, which makes it a keeper in my box. I used beef broth instead of water, and doubled the meat like other reviewers suggested. Delicious!

BBQ Chicken Pizza II

This was really good and it was so fast to make. I seasoned the chicken, and also seasoned and very lightly sauteed the vegetables so that they wouldn't be crunchy. My husband and 2 year old loved it.

Chocolate Chip Cheese Ball

Everyone really liked this recipe, several people commented on how yummy it was. I followed the suggestions of other reviewers and increased my powdered sugar to 1 cup and the brown sugar to 3 Tbsp. It really did taste like chocolate chip cookie dough! I would actually give this 4 1/2 stars if I could.
