African Chicken Stew

This is a family favorite. I do not use the garbanzo beans. I usually saute in rendered bacon fat and crumble the cooked bacon on top at the end. I also finish the dish with a light drizzle of toasted Sesame oil.

Exchange Gang Pasta with Shrimp

I used the exact ingredient, but made minor alterations to the directions so I wouldn't risk overcooking the shrimp. I think that a red bell pepper and a pinch of red pepper flakes would work with this.

Pizza Dough I

I consider myself a good cook with a general knowledge of baking. I've tried this twice. It just didn't work for me. It was flat, hard, bland (although a bit sweet), and just not good each time. It was a lot like a frozen pizza. Taking time with pizza dough is worth the effort. I give it a two because it wasn't inedible and because I recognize that it is possible that I just missed something.

Chicken Jalfrezi

I don't know if this recipe is authentic nor how it compares to the original. But I do know that I love all of the ingredients and this combination definitely didn't disappoint. Yumm! I will make this again and again. I think adding some diced potatoes in the last 10-15 minutes would make this even heartier and next time I will add some heat. I cut my chicken into bite size pieces. I served on basmatti rice with Naan.

African Peanut Soup

Slow-Cooker Pepper Steak

Yummy! I used crushed tomatoes. Also, I diced and added 6 pickled-jalepeno slices and finished the dish with a couple tablespoons of red wine vinegar. Served over Jasmine Rice.

Zing-a-Ding-Ding Spaghetti with Albacore Tuna

I thought this was okay. It could use some punching up. Perhaps some briney, salty black olives. I was surprised at how well the tuna worked.

Baked Spaghetti

Really Good! I modified the recipe a bit to be pretty much my lasagne recipe but built according to the stated directions and with spaghetti. It was a lot easier than dealing with lasagne noodles and all that layering. I did not use the foil.

Farmer's Casserole

It was good. It didn't blow me away but it was a good way to use left-over ham. I had a leek instead of green onions. I added more salt than called for and was glad I did. I served it with picante sauce and sour cream to liven it up a bit.

Beef and Parmesan Pasta

I thought this was okay. I had high hopes for it and I really jazzed it up with onion, garlic, bell pepper and finished with a splash of red wine vinegar. It was still a little bland and requires a good amount of salt to bring out the flavors. Also I think adding some Italian seasoning would help. Furthermore, 20 minutes is a long time to cook any pasta. Overall, I may make it again, the Zucchini was really yummy.
