Chicken or Turkey Tetrazzini Deluxe

Reviewed: Apr. 12, 2014
Very tasty!! I've made turkey tetrazzini for years and teas happy to come across a slightly different yet delicious alternative!! The only change I made was using yellow and orange peppers bc it was all I had (loved the peppers in it!) And I used cream of chicken instead of mushroom bc it was all I had- delish but I will try with the mushroom next time. Oh and two 7oz cans of mushroom. Love finding a recipe I didn't have to buy new groceries for!! Thank you!

Salsa Chicken Rice Casserole

Reviewed: Jun. 3, 2013
Delicious! I did make changes with the help of a few other reviews & I added a few time savers. Every weekend I roast a chicken to use for several dishes for lunch & dinner- chicken salad, tetrazzini, etc. So I used already roasted chicken & just sauteed with low sodium taco seasoning (but tempted to try without to see if that's necessary). I used 1.5 boil in a bag brown rices. I used the Campbell Select soups for lower sodium and only used 3 cups of cheese (but am thinking of trying only 2 cups next time- was very rich and cheesy). The next day we had it for lunch in whole wheat wraps! I also may try it next time adding corn and black or refried beans- think it would add something. Thanks for the recipe!

Stuffed Peppers for Two

Reviewed: Jun. 28, 2012
The easiest stuffed pepper recipe I've come across and DELISH! Most make you brown the meat first. There's only two of us but I doubled the recipe as we like leftovers. Only changes I made were instant brown rice and ground turkey instead of ground beef. Also added some garlic powder which I think complimented the flavor nicely. Seemed a little liquidy when raw but cooked it was perfect! Thank you!

Cajun Shrimp Orecchiette

Reviewed: May 1, 2012
Absolutely delicious- the sauce was so good with a little kick to it. The only thing different I did was put about 5 cloves in of garlic. May make some garlic bread next time to dip in that delicious sauce! Used frozen shrimp- came out great.

Chicken Tetrazzini IV

Reviewed: Dec. 7, 2011
Delicious- but I used a package of sliced mushrooms (tried it once with regular mushrooms and once with baby bella- both great). I also doubled the recipe- I like it to be creamy, and think it can dry out in the oven if you don't. I sauteed garlic, mushrooms and fresh spinach- drained it then added to the dish. It was absolutely delicious.

Chicken Potpie

Reviewed: Dec. 7, 2011
This recipe was delicious! I added a little bit more onion because I love onion. Also, I think there was a typo but I think you need 2 boxes of the double pie pastry (so for each pie, there's a bottom and a top crust). At least that's what I did and it came out perfect!

Chicken Souvlaki Gyro Style

Reviewed: Sep. 24, 2011
This was delicious!! To make easier I did it in two stages: marinated chicken one night & made/refrigerated the sauce, then made it the following night. I totally agree about pitas- spend the extra money to get quality pitas or they'll fall apart. We didn't have pepperoncini but it didn't take anything away. No need to do as others' said about removing water from cucumber- I added it right to the sauce and after being refigerated overnight the sauce was perfect texture. Excited to make this again- thank you!!

Chicken Curry Puffs

Reviewed: Apr. 26, 2011
Very tasty and a unique appetizer! Brought to Easter and everyone loved them. The puff pastry isn't the easiest thing to work with- before cooking they looked beautiful then as soon as they started cooking they opened up. I found that when they were cooling I was able to push the folds back down no problem. The trick with puffed pastry is keeping it cold while you're working with it (and water patches up holes). Thank you! Will be making this again! Does take some time but worth it (especially if you're only in charge of appetizers!)

Slow Cooker Latin Chicken

Reviewed: Apr. 26, 2011
It was good and interesting for sure. There was something I didn't love- I think I'll cut back on the cumin next time, maybe just a teaspoon.

Chicken Milano

Reviewed: Apr. 19, 2011
It was ok but needs some help. The sauce was thin and I definitely wish I took others' advice and doubled it, maybe with some corn starch to thicken. I love garlic so doubled the garlic and still thought it could use more and maybe more sun dried tomatoes too. It has the right flavors just needs more. Could see the tweaked recipe working with shrimp really well.

Layered Chicken and Black Bean Enchilada Casserole

Thought it was very tasty but very liquidy- next time I will not even do the tortillas and put the whole thing over rice. Like I said, very tasty thought.

Turkey and Quinoa Meatloaf

Reviewed: Apr. 12, 2011
The recipe seemed pretty tasty but was way overcooked- I didn't want to rate it too low so people don't miss out on the recipe. I make turkey loaves very often and have never cooked them for 50 min, more like 35-40. I will try it again like that and hopefully it comes out as everyone has said! As I said, recipe itself was tasty.

Garlic Chicken

Reviewed: Apr. 1, 2011
I was skeptical about this before making it. Seemed too easy- it's ingredients I always had and I didn't think it would stay as moist as everyone had said. It was delicious!! I used butter instead of oil as someone suggested. It was moist, and very flavorful (nice and garlicky like I love it!) Plus took no time to prepare!! THANK YOU!

Grilled Garlic Potatoes

Reviewed: Sep. 14, 2010
Recipe was simple and very tasty. I needed something to throw together last minute for a cook out and this was perfect. The first time I grilled it as they said, the second time I put it in the oven for about 25 minutes on 400. Both ways delicious! May try to put on grill pan next time to get them more crispy. Thanks!

Mediterranean Stuffed Chicken

Reviewed: Mar. 12, 2010
Thought it was delicious! I did add roasted red peppers and doubled the cream cheese. I used big pieces of chicken and didn't pound them enough after I butterflied so it ended up taking closer to an hour. Also the stuffing ended up coming out a lot and made more of a sauce, but was still really good. I will use thinner pieces next time though- the mix was really very tasty. Also I'll use the string, as suggested instead of the toothpicks I used. Thank you!

Banana Sour Cream Bread

Reviewed: Feb. 1, 2010
Delicious! This tasted close to my mom's recipe, which is hard to top! I too cut the recipe in half but instead of doing 2 cakes, I made in a 10x10 pan. I cooked on 325 for 1 hour and it was perfect- golden brown and perfectly moist!

Kathy's Delicious Whole Slow Cooker Chicken

Reviewed: Feb. 1, 2010
Very tasty- I never remove the skin usually but really thought it made the taste. Didn't have balsamic so used red wine vinegar, and didn't have sesame oil so just left it out. Added a little extra garlic because I love it- was very good!

Terrific Turkey Chili

Reviewed: Jan. 19, 2010
Very good! It was nice and hearty and I actually felt like I was eating really healthy. I used a can of red kidney beans (suggested by others) and only two zucchini b/c that was all I had- I thought it was plenty. I didn't have sour cream, cheese or green onions and it was still great (though I will try with them next time)! Thanks!

White Chocolate Raspberry Cheesecake

Reviewed: Jan. 12, 2010
I LOVE this recipe and have made it for every holiday for the past few years (by request). After the first few times of using the frozen raspberries I used someone's suggestion about getting the jar of seedless rasp. jam and it was a HUGE time saver without any mess. The only other thing I change is using Vanilla Wafers instead of the chocolate cookie crumbs. Thanks so much for the recipe!!
