Tri-Tip Rub

Simple and sooooo tasty. However, I also added cumin and chili powder for a deeper, more robust flavor. Will definitely be making this again and again!

BLT Pasta Salad

I love pasta, I love ranch and I love BLT's. I wanted to LOVE this recipe too, but it just didn't come through. It was bland, even when mixed fresh. I cooled the pasta on a cookie sheet and lightly drizzled/tossed with olive oil to prevent the dressing from absorbing. Chilled for 3 hours and by then all the dressing was absorbed anyway. The bacon was excellent & I used whole grape tomatoes which were good. Just the pasta part was bland. Not necesarily a bad recipe, but I'll stick to vinaigrette dressings from now on.

Southwestern Roasted Corn Salad

I used canned corn (Trader Joes) as a shortcut and it tasted great! Roasted corn is probably better, but I can't resist such a timesaving substitution. I also like it spicy so I added additonal hot sauce. I'll add diced jalapeno's next time for a fresh, crunchy kick. Recommend reducing the olive oil just a bit. Will definitely make again for my next BBQ.

Dip For The Stars

Delicious, easy prep, looks colorful, and it's a make ahead appetizer to top it off! Doesn't get any better in my book. I've seen & tried other versions of this recipe, but I like this one better. I like the feta and shallots make the difference. Others loved it too. Try it, you won't be disappointed.

Turkey Tetrazzini II

Great basic recipe, although I tweaked to fit what I had on hand and liked my substitutions. Used 1 cup heavy cream instead of 2 cups milk (richer, thicker), used 1/3 cup flour, used turkey stock (obvious leftover from Thanksgiving bird!), used wide egg noodles instead of spaghetti (not a tangled mess). Added sauteed onions & sliced mushrooms. Also added small brocolli florets, plunged in with noodles near the end of cooking. Added a pinch of nutmeg. Added seasoned bread crumbs on top per other review (definite crispy plus!). I know...not much like the original recipe, but it shows that you can add/change to your liking. That's why I gave it 5 stars!

Fragrant Chicken Curry

This was EASY to prepare and very tasty. I sliced semi-frozen chicken breasts and added just after the onions started to turn translucent. The chicken released juices into the mixtures but cooked up just fine. Unfortunately, I didn't have coconut milk on hand and ended up substituting milk, more chicken broth mixed with a little cornstarch and a few pinches of sugar. It didn't thicken as well as coconut milk or have as rich of a flavor, but it was still delicious. Will definitely make again with coconut milk. More fattening, but I'm sure it will be worth it!

Roast Pork with Maple and Mustard Glaze

This was extremely easy to prepare and very tasty. I didn't have good maple syrup on hand, so I used pancake syrup. It was a little sweet and not as thick, but still great. I basted frequently. Next time I might add a little crushed red pepper to kick it up a notch and balance out the sweetness. Definitely a repeat!

Stuffed Peppers

Very good and easy to prepare. I sauteed chopped onion along with the ground beef. Also added fresh chopped tomatoes and fresh garlic to mixture. Agree w/other reviewers that it needed a little more sauce. Will also blanche peppers next time as other review suggested. Peppers came out with some "bite"...not bad, but a minute or two blanche would probably soften just a bit more "al dente".

Macadamia Nut Crusted Mahi Mahi

The macadamia crust was wonderful and will definitely make it again (per the recipe). I followed some other reviews and substituted canned pineapple & mango for the sauce. I think fresh fruit (as the recipe calls for) would be far, far better. I served with saffron rice and roasted asparagus. A colorful & very tasty meal.

Grilled Thai Chicken

In my opinion, most marinades need longer than 20-30 minutes to really yield a deep flavor. This surprised me! It was delicious with only 30 mins time. I also added lime juice and some extra "Schezuan Seasoning". I would not call this Thai food, but the flavors were heading that direction. It was perfect for a quick weekday meal with some "Thai Kitchen" rice and garlicky green beans.

Sensational Sirloin Kabobs

Very tasty and not too sweet although I may have cut back on the sugar a little. I also add 1/4 tsp crushed red pepper flakes, but hardly noticed any heat. My family is not a fan of sweet marinades and prefers a little kick. Next time I'll add a little more red pepper, but for this review I'll say it's very good as is. No need to doctor it up unless you feel the need.

Smothered Mexican Lasagna

This is a great variation to the usual italian dish. I used ground beef, diced tomatoes with jalapenos and no-boil lasagna noodles. I also added fresh cilantro and a little cumin to the ricotta mixture and topped with cheddar and olives as previously suggested. Came out very tasty. Next time, I'll make it a little spicier. I think you can adjust the spice to your taste easily by changing the flavor of diced tomatoes and adding whatever other peppers/seasonings you like.
