Jamaican Oxtail with Broad Beans
I cooked it for 6.5 hours on my stovetop on 3 (dial goes from 1 to 10). It came out PERFECT! I used to get oxtail at a Jamaican restaurant, and I think this might actually be better. I did leave out the beans, and it's really excellent over rice. Make sure you grab the bones with your fingers and suck the gooey stuff off the ends! That's the best part :)

JG's Irish Lamb Stew
This was excellent! We left out the rutabagas and added a bit more potato. We also used some San Marzano tomatoes we had on hand instead of the fire roasted tomatoes. And, we used dried herbs instead of fresh, as we also already had those on hand. We did not add the flour at the end, but the broth still had a nice thickness from the barley. We used a nice coffee porter from a local brewery instead of Guiness. All in all very tasty!

Wisconsin Cheese Soup II
Best cheese soup recipe I've used! Of course, I did alter it. I used the basic formula and just changed the veggies and cheeses to what I had on hand. For veggies I used celery, carrots and green beans simmered in vegetable broth. Instead of butter I used bacon fat and garlic olive oil. For cheese I used horseradish cheddar and Neufchatel cream cheese. At the end I gave it a sprinkle of dill and went heavier on the black pepper. Fantastic!!!! The texture is perfection.
