About this Cook
I started cooking when I was about 10. Have been inspired by my mother and grandparents (Jewish) and my wife and her family (Filipino). Quite a contrast of cooking styles, and many things in between.
My favorite things to cook
Barbecue, homemade pizza, bread and rolls, steak on the grill, lately more fish to control cholesterol, especially salmon.
My favorite family cooking traditions
I enjoy cooking anything for family and friends. I am known for cooking too much food at parties. The reason is because I want to make sure that everyone can find something that they like. So if we have a BBQ theme, I will cook brisket, chicken, sausage, and ribs. Kind of like going to an all you can eat buffet!
My cooking triumphs
My brother-in-law asked me to cater his wedding. Not being a professional chef, it was quite a challenge cooking for over 100 people and keeping everything piping hot until serving time. Everything came out great!
My cooking tragedies
I can't remember anything specific, but I have tried things that didn't turn out good. I either adjust the recipe or don't make it again. Nobody's perfect, except for Emeril Lagasse! :o)

Meatball Nirvana
These meatballs have a great flavor. My only complaint is that they stuck to the pan. I recommend spraying the pan with nonstick cooking spray. Just a tip, I made the mistake of placing the finished meatballs in a pot of marinara sauce. The meatballs started falling apart because they are very soft. Next time I won't add them to the sauce. Other than these two things, they were excellent.

Best Cream of Potato Soup
The flavor of this soup is excellent but it is way too thick as written in the recipe. I had to add 3 cups more milk to keep the liquid high enough to cook the potatoes and have any liquid left over for "soup". You don't need to use a "large stock pot" for the amount of liquid in the original recipe. Even after adding another 3 cups of mllk, my stock pot (8 quarts) was only about 1/3 full. After adding more milk, the soup was the perfect thickness for us and had excellent flavor. I substituted 3 tablespoons of olive oil for 3 tablespoons of the butter to cut back on the saturated fat. I doubt if this had any effect on the flavor of the soup and it makes it a bit healthier. I also substituted 1 1/2 cups water and 2 chicken bouillon cubes for the 1 1/2 cups chicken broth and 1/4 teaspoon chicken granules stated in the recipe.

Thai Tuna Burgers
These tuna burgers were very good and a nice change of pace from a grilled tuna steak. I recommend spraying the pan with non stick cooking spray. The first side stuck to the pan a little. I sprayed the pan and flipped them over, and the second side did not stick. These burgers were full of flavor and not dry at all.
