I had been trying to make crepes for a year, but they always turned out a disaster, and I had sadly given up hope. But since I had run out of ideas of what to cook for dinner I thought I'd look up a recipe on-line and give it one more shot. I couldn't believe how easy it turned out to be with this recipe! I had bought a crepe pan for $7 and I was surprised to find out I didn't need to put oil or butter in the pan to flip them over. The secret is the butter in the batter. It melts and keeps the crepes from sticking to the bottom of the pan and it also makes them very easy to flip. We had them with the apple cinnamon mix one user recommended, with oranges and powdered sugar, and with my own filling, mushroom and feta cheese. You can also slice the remaining rolled up crepes in very thin strips and put them in chicken or vegetable broth for what the Germans call flaedle soup. Yum.
