I am originally from Canada (Ottawa) but moved to Australia in 1996 to marry my wonderful husband, Graeme. We live in country Victoria with our three cats, Hugo, Kasper and Maggie.

We are vegetarians so I'm always looking for ways to make our meals tasty and interesting. I also love to bake and try to find healthy recipes that also taste great.

I make a lot of soups and stews, pasta and rice dishes.

My cooking tragedies
A birthday cake I made for my husband one year was the baking equivalent of Charlie Brown's Christmas tree. He still loved it even if it was slanted on one side and the icing all slid off.

Spinach Quiche
My husband had invited a colleague to dinner recently. I know the rule about trying new recipes on guests but this looked so good, I couldn't resist. Well, this came out so well that both the men had seconds. I will offer a word of caution to anybody like me (in rural Australia) that cannot get a large pie crust, you will only be able to fit half the filling in a small crust. I used the leftovers next day by filling muffin tins and making mini-quiches. These came out really well, too. I will be making this again. It's very nice in the summer with a salad. Highly recommended.

Thai Pineapple Chicken Curry
Very tasty. I made some changes - some by accident, some by design. We are vegetarians so I substituted 4 pieces of soy chicken and 1 cube of vegetarian chicken stock for the chicken. I substituted soy sauce for the fish sauce. I used a whole red pepper and a whole yellow pepper instead of half and I added a handful of chopped peanuts and some garlic. I ran out of red curry paste so used half Pad Thai paste. It still tasted great. I also stir-fried all of the vegetables in advance before adding the rest of the ingredients. I let it simmer for about 1/2 hour then served on Basmati rice. I did find it a bit thin so next time I will add 1 T of corn starch to thicken it up.

Fluffy Pancakes
I made these for Pancake Tuesday this week and they were a huge hit. I have been searching for years for the perfect pancake recipe - fluffy, light, tasty and very absorbent - and these were perfect. They were quite filling - my husband and I had two each and that was plenty.
