Sopapilla Cheesecake Dessert

I made this dessert for a potluck at work. Everyone enjoyed it so much I was asked to make it again later in the week for a co-workers birthday. Had to make it at home as well because the family wanted to try it. I omit the almonds because I knew some aren't fans of nuts and it didn't need it. I have given this recipe out more than any other. Super easy recipe!

Italian Meatball and Cheese Tortellini Soup

Excellent Soup! Made as directed except used frozen spinach in place of the kale and cut meatballs in half (they were a little big for soup). Only complaint is there was not enough stock for amount of ingredients. Will double the beef stock next batch. Great recipe! Will make again and again!

Toscana Soup

Excellent Soup - My changes were the following: Used 1 Box (4 c) Chicken Broth instead of water and soup base; 1 pkg Mild Italian Sausage Links (casings removed) instead of sliced sausage links; 1 pkg spinach instead of Kale. This was fast, easy, tasty and hit the spot! Will double the recipe in the future--it was gone too fast! This is a keeper!

Excellent Soup - My changes were the following: Used 1 Box (4 c) Chicken Broth instead of water and soup base; 1 pkg Mild Italian Sausage Links (casings removed) instead of sliced sausage links; 1 pkg spinach instead of Kale. This was fast, easy, tasty and hit the spot! Will double the recipe in the future--it was gone too fast! This is a keeper!

This cake was great and easy to make. I substiituted cool whip for the packaged whipped cream. It was easy to prepare and tasted great! I would make this again.

Mexican Lasagna

This is a great recipe! You can make this with whatever you have on hand. I generally omit the tomatos (doesn't need it) and salsa due to preference in my house; I usually cook 1-2 lbs of ground beef and one small onion, then mix in taco seasoning as per package directions. I make a cup of Minute Rice and add it to my hamburger mixture. Rice is so great in this! It also bulks up the hamburger mixture and extends it out a bit for more layers. I layer mixture on bottom, cheese, tortillas (flour in our house--yes I know it's no longer an enchilada--its now a burrito) then repeat. Top layer gets an extra handful of cheesy goodness! Cover with foil, heat through and serve with black olives, salsa, enchilada sauce, guacamole, sour cream....endless possibilities!

Cake Balls

Althought time and labor instensive (especially dipping), this is one of the most requested recipes I have ever made. The possibilities are endless with this recipe and whoever came up with it is a genius! Nobody would ever know this was cake. It tastes like truffles. My favorite it strawberry cake mix dipped in Hershey's milk chocolate melted chips. Orange cake dipped in dark chocolate is also delish. You can't go wrong with any combination in my opinion!

Creamy Macaroni and Cheese

I am sad. I am usually known for bringing great food to the office for potlucks. I even read "Cheese Sauce Made Easy" in the AllRecipes Top Related Articles to insure mine wouldn't turn out grainy. Although the texture is fine, the taste just seems "off". I am in the process of trying deciding whether or not to add Cheese soup as some have suggested just to try to salvage this dish. As of right now, I won't be taking this dish to the office. I don't want to lose my reigning potluck crown, if you know what I mean. This carries the lowest rating I have left on a recipe on this site.

Banana Banana Bread

Just had my first slice of this bread and it is the most MOIST bread I have ever made! This will be my new banana bread recipe from now on. Followed the recipe as is...the only difference is a mixture of brown/white sugars, butter and flour that I made as a streusel topping and added to the top the last 10 min of baking. Spread with a little honey butter and WOW!! OUTSTANDING!

Sweet Dinner Rolls

First time using yeast; have always beens scared of trying, but this was easy and soooo delicious! I followed the recipe exactly and they were perfect! I will make again and again. Two batches proofing now for Easter dinner tomorrow!

Mom's Best Peanut Brittle

This was superb! HOWEVER, duly note: USE THE WOODEN SPOON!! My first batch was looking perfect as I stirred it around with a high-temp rubber spatula--until the end, when I added the baking soda and butter and kept stirring, I realized my red spatula had melted into the brittle and at the last second...it was ruined! Not to be outdone, I immediately started a second batch, added a little brown sugar, a little vanilla (at the end) and used a wooden spoon the entire time and VOILA! PERFECTION!

Libby's® Pumpkin Cheesecake

This was an incredible cheesecake! After searching others and seeing they were not nearly as thick, I decided on this and was not disappointed! The only changes I made was to substitute crushed butter cookies (with cinnamon and pumpkin pie spice) for the graham cracker crumbs, and omitted the sour cream topping....replaced with whipped cream. This has a pumpkin pie taste in a cheesecake consistency. EVERYONE LOVED IT!
